Tutti Frutti Cake
Made with very few ingredients like nuts, buttermilk and dry fruits, this soft and moist cake is perfect for all kinds of celebratory occasions. Tutti frutti cake can also be paired with tea, coffee or any other of your favorite beverages.
Ingredients
- 1 cup of plain flour
- 2/3 cup of sugar
- 1/2 tsp of baking powder
- 1/2 tsp of baking soda
- 1 egg
- 1/2 cup of buttermilk
- 1/4 cup of butter, softened
- 1/2 tsp of vanilla extract
- 1/3 cup of tutti frutti
- A pinch of salt
Method
- Preheat the oven at 400 F (200 C). Grease an 8-inch pan with butter.
- In a mixing bowl, whisk together the flour, sugar, salt, baking powder and baking soda.
- Then add the egg, vanilla essence, buttermilk, and butter to the mixture and combine well.
- Using an electric beater, beat the prepared mixture on low speed for 1 minute. Scrape down the sides and beat again for 1 minute on medium speed. Pour batter into the prepared pan.
- Sprinkle the tutti frutti and your favorite fruits and nuts, on top evenly.
- Bake for 25-30 mins or until the top turns golden brown. Let it cool completely. Finally, slice and serve.
Tutti Frutti Cupcakes
These cute little cupcakes are delicious, spongy and very easy to prepare. The main ingredients for tutti frutti cupcakes are flour, baking powder, eggs, milk and vanilla essence. These candied fruits contribute bursts of sweetness that perfectly combine with the soft and pillowy texture of the cupcakes.
Ingredients:
- 1 cup + 1 tbsp plain flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/4 cup oil
- 1/4 cup milk
- 2 tbsp + 1 tbsp tutti frutti
Method
- Preheat the oven to 180-degree C. Line a cupcake pan with cupcake liners.
- In a mixing bowl, add 2 tbsp tutti frutti and 1 tbsp plain flour and mix well until combined. Set it aside.
- Sift together flour, baking powder and salt in a bowl and set it aside.
- In another mixing bowl, add eggs, sugar and vanilla essence and beat until creamy and fluffy. Add oil and milk to this and beat again until well combined.
- Add sifted flour mixture in two batches and whisk well using a spatula. Then add the remaining tutti frutti and combine gently.
- Divide the batter between the liners and top it with some tutti frutti. Bake in the oven for 18-20 minutes or until golden brown.
- Transfer the cupcakes to a wire rack and leave to cool completely. Frost it according to your preference and serve.
Tutti Frutti Ice Cream
Tutti frutti is also a great addition to your favorite frozen desserts. The candid fruits when combined with the soft and creamy ice cream, create a heavenly delight that is impossible to resist. Tutti frutti goes well with all flavors of ice cream.
Ingredients
- 2 egg whites
- 120 g vanilla caster sugar
- 300 ml double cream
- ½ tsp almond essence
- 60 g glacé cherries
- 60 g dried mango
- 60 mixed berries
- 30 g pistachios
- Tutti frutti as required
Method
- Chop the dried fruit into tiny pieces and keep it aside. In a large bowl whisk all the cream until thick.
- Whisk the egg whites in a separate bowl until they are stiff. Add the sugar to it and combine well.
- Fold the egg white mixture with ice cream. Add the fruits to the mixture and stir well.
- Churn it in an ice cream maker and garnish with tutti frutti. Serve chilled.
