Most of the time, a lot of us forget about the things we have watched but some of them leave their mark on us, and Derry Girls is one such series. This popular Northern Irish sitcom has captured the hearts of audiences worldwide. Set against the backdrop of the tumultuous 1990s, it is filled with hilarious antics and relatable characters.
Besides its witty humor and engaging storyline, "Derry Girls" also provides a delightful peek into the culinary delights of Northern Ireland. If you are also a die-heart fan of this sitcom, here are three delicious desserts inspired by the show:
Funny Scones
This is basically a cinnamon raisin canna-cream scone that is inspired by this iconic series. It is studded with raisins and a hint of cinnamon along with cannabis-infused cream. They are soft and tender and can be stored for up to three days.
Ingredients
- 3 cups all-purpose flour
- 1/3 cup granulated sugar + more for sprinkling on top
- 1 tbsp baking powder
- 1 tsp fine-grain sea salt
- 1/2 tsp ground cinnamon
- 1 cup raisins
- 1 1/2 to 1 3/4 cups Canna-Cream + more for brushing tops
- 1 tsp vanilla extract
Method
- Preheat the oven to 425° F. Line a baking sheet with parchment paper. Combine the dry ingredients in a mixing bowl. Add the raisins and combine until they are all well-coated with the flour mixture.
- Turn out of the bowl onto a lightly floured work surface and pat the dough into a circle that is almost 1 inch thick. Using a biscuit cutter, cut the dough into rounds. Re-pat the dough into a mass of the same thickness until all of the dough has been used. Set the biscuits on the prepared baking sheet.
- Brush the tops of each scone with a thin layer of cream, then sprinkle with some of the extra sugar. Slide into a preheated oven and bake for 13-15 minutes. Transfer to a cooling rack. Cool completely and store them in an airtight container.
English Trifle
This is another Derry Girls inspired dessert you can try at home. The English trifle was featured in the Holiday episode of the show. Prepared with ingredients like sponge cakes, spirits, fruit and egg custard, this delight is rich and creamy in texture.
Ingredients
For the custard
- 4 cups whole milk
- 4 tbsp cornstarch
- 4 egg yolks
- 1 cup of sugar
- ½ tsp salt
- 4 tsp vanilla extract
Items for Assembly
- 16 slices lemon pound cake (about 1/2" thick)
- ½ cup cream sherry
- 30 oz raspberry jam
- 1 ½ cups heavy cream (whipped with 4 tbsp sugar a pinch of salt, and 1 tsp vanilla extract)
Method
For the custard
- Place the vanilla essence in a large mixing bowl. Set a fine mesh strainer over the top and keep it aside. In a medium saucepan, whisk the milk, corn starch, egg yolks, sugar and salt.
- Bring this to a boil over medium heat, whisking constantly. Once done, turn the heat down to low and cook for another 30-45 seconds, whisking vigorously.
- Switch off the heat and strain the custard into the bowl with the vanilla. Combine the custard and vanilla together thoroughly.
To Assemble
- Cut rectangles of pound cake about 1/2" thick and set them in the bottom of a 9"x13" baking dish. Drizzle a little sherry over the layers and evenly spread on a layer of raspberry jam about 1/8"-3/16" thick.
- Add another layer of cake. Sprinkle it with some more sherry. Spread on another layer of jam. Pour the custard evenly over the top of the trifle (make sure that custard runs down into any gaps between the cake and the sides of the pan).
- There should be about 1/2" of space between the top of the custard and the top of the pan. This place should be left to spread the whipped cream.
- Cover the trifle with plastic wrap and store in the refrigerator to chill thoroughly. Once done, spread the whipped cream evenly over the top of the dessert.
Potato Candy
Potatoes are a staple in Irish cuisine, and in "Derry Girls," they find their way into surprising places. So, put a sweet spin on the humble vegetable and make potato candy. These sweet potato delights are both charming and delicious.
Ingredients
- 1/3 cup peeled, cooked, and mashed russet potato, cold
- 1 tbsp milk
- 1 tsp vanilla extract
- 1/8 tsp table salt
- 6 to 7 cups powdered sugar
- 1/3 cup creamy peanut butter
Method
- Beat mashed potato and the next 3 ingredients at medium speed for 2 minutes.
- Beat in 6 cups powdered sugar, 1 cup at a time. Add up to 1 cup powdered sugar, 1 Tbsp. at a time, to make a dough.
- Gather dough into a ball; dust with powdered sugar. Roll to 1/8 inch thick on parchment paper and cut into a 12- x 10-inch rectangle.
- Generously sprinkle powdered sugar over dough and place a piece of parchment paper over rectangle. Invert rectangle; discard parchment paper on top.
- Spread peanut butter over dough. Starting at one long side, tightly roll up candy, jelly-roll fashion, using parchment paper. Wrap in parchment paper and freeze 1 hour. Cut into 1/4-inch-thick slices and serve.
