The excitement of planning a get-together often comes with a significant challenge — what do I make? However, the more pertinent question should be — do I have the time to make? Between juggling work and home commitments, while also trying to plan a party, the stress can be overwhelming. We’ve solved that problem for you — at least your dessert menu is taken care off — with these five recipes for super easy no bake dessert recipes.

Peach Melba

There’s nothing like ending a heavy meal with a bowl of fresh fruit dessert. This peach-raspberry no bake dessert takes only 30 minutes to prepare.

Ingredients

  • 4 peaches (firm and ripe)
  • 400 gm granulated sugar
  • 58 gm confectioner’s sugar
  • 1 tsp lemon juice
  • 369 gm raspberries (divided)
  • Vanilla ice cream (for serving)

Instructions

  • Using a pairing knife, score an X at the bottom of each peach. This will help with peeling them later.
  • Mix sugar and 946 ml water in a saucepan and bring it to a boil. Stir until the sugar is dissolved.
  • Reduce the heat to medium-low and add peaches. Let it simmer for 6-10 minutes until the peaches turn tender. Set it aside and let it cool.
  • In a blender, combine confectioner’s sugar, lemon juice and 246 gm raspberries and blend for 2 minutes until smooth. Strain the mixture through a fine mesh sieve into another bowl.
  • Once the peaches have cooled, peal the skin, cut them in half and discard the pits. Cut each half into four wedges.
  • To serve, add slices of peach in a bowl along with scoops of ice cream and drizzle with raspberry sauce. Garnish with fresh raspberries.

Greek Yogurt Panna Cotta

This healthy version of the famous Italian dessert features sweet notes and a slight tang from yogurt, and takes only 15 minutes to prepare.

Ingredients

  • 60 gm heavy cream
  • 1 tbsp gelatin (unflavored)
  • 236 ml whole milk
  • 113 gm honey (plus more for serving)
  • 1 vanilla bean (seeds scraped)
  • ¼ tsp salt
  • 500 gm Greek yogurt (plain)
  • Blackberries or raspberries (for serving)

Instructions

  • Stir ice cream and gelatin in a bowl until combined. Set it aside to soften for about 5 minutes.
  • In a saucepan, heat milk, vanilla seeds, honey and salt and stir until the honey dissolves. Bring the mixture to a gentle simmer, then turn off the heat. Add the gelatin mixture and stir until combined. Finally, add yogurt and whisk until combined.
  • Pour the yogurt mixture into ramekines, cover and refrigerate for at least 4 hours or up to a day.
  • Serve the panna cottas with your choice of berries and a drizzle of honey.

Orange Creamsicles

One of the easiest desserts to make — only 10 minutes! — these orange creamsicles are refreshing and satisfying, especially on a hot summer day.

Ingredients

For the orange base:

  • 355 ml frozen orange juice concentrate
  • 120 gm heavy cream
  • 50 gm granulated sugar
  • ½ tsp pure vanilla extract
  • ⅛ tsp salt
  • Orange food coloring (optional)

For the vanilla yogurt base and assembly:

  • 245 gm full fat plain yogurt
  • 235 gm heavy cream
  • 50 gm granulated sugar
  • 1 tsp pure vanilla extract
  • ⅛ tsp salt

Instructions

  • To create the orange base, blend orange juice concentrate, sugar, cream, vanilla, extract and salt in a mixer on medium-low speed until well combined. If you like, you can add a few drops of orange food coloring and blend. Transfer the mixture into another bowl, cover and refrigerate.
  • To create the vanilla yogurt base, whisk yogurt, cream, vanilla, sugar and salt until combined. Cover and refrigerate.
  • Scoop 1 tbsp of the vanilla mixture followed by 1 tbsp of the orange mixture into your ice cream molds. Repeat the process until you’ve used up both the mixtures.
  • Pop the molds into the freezer for at least 8 hours or overnight.
  • To serve, quickly dip the molds into warm water to release the creamsicles.

Banana Pudding Bars

The world of puddings and cheesecakes collide in this no bake dessert recipe for banana pudding bars, which take only 10 minutes to create!

Ingredients

For the crust:

  • 180 gm plain wafers (crushed)
  • 5 tbsp unsalted butter (melted)
  • 2 tbsp granulated sugar
  • A pinch of flaky sea salt

For the filling:

  • 226 gm cream cheese (softened)
  • 100 gm granulated sugar
  • 176 gm whipped cream
  • 414 ml whole milk
  • 96 gm instant banana pudding mix

For the topping:

  • Whipped cream
  • Half a banana (sliced)
  • 9 plain wafers

Instructions

For the crust:

  • In a bowl, add crushed wafers, butter, sugar and salt and mix until combined.
  • In a pan lined with parchment paper, spread the mixture and press to create an even layer. Then, pop it in the freezer.

For the filling:

  • Using a handheld mixer on medium-high speed, beat cream cheese in a bowl until it turns fluffy. Add sugar and beat until combined. Fold in the whipped cream.
  • In a separate bowl, whisk milk and pudding mix. Refrigerate for about 5 minutes or until the mixture has thickened. Fold it into the cream cheese mixture until well combined.
  • Evenly pour the filling over the prepared crust and freeze for at least 6 hours or overnight.

To serve, cut up the bars and top them with a dollop of whipped cream. Place a slice of banana and wafer on each bar.

Ricotta Cheesecake

This no bake dessert is creamy, cheesy and features the caramelized and mildly spicy flavor of Biscoff. You only need 30 minutes in the kitchen to make it.

Ingredients

For the crust:

  • 18 Biscoff cookies (finely crushed)
  • 4 tbsp unsalted butter (melted)
  • 1 tsp lemon zest (finely grated)

For the filling and assembly:

  • 2½ tsp gelatin powder
  • 117 gm heavy whipping cream
  • 150 gm granulated sugar (divided)
  • 751 gm whole milk ricotta
  • 250 gm mascarpone
  • 1 tbsp lemon juice
  • 2 tsp vanilla extract
  • ¼ tsp salt

Instructions

To make the crust:

  • Line a springform pan with parchment paper.
  • In a bowl, mix cookies, butter and lemon zest.
  • Pour the mixture into the pan; press to create an even base.

To make the filling:

  • In a bowl, add gelatin powder to 50 ml of hot water. Give it a quick stir and let it sit for 5-10 minutes until the gelatin absorbs the water.
  • Using an electric mixer with a whisk attachment, beat whipping cream with 100 gm granulated sugar until you see stiff peaks form.
  • In another bowl, mix ricotta, mascarpone, lemon juice, vanilla bean paste, salt and the remaining granulated sugar. Add gelatin and stir until combined. Finally, fold in the whipped cream mixture.

Putting it together:

  • Pour the filling into the crust and refrigerate for at least 1.5 hours or overnight.
  • Cut out a slice and serve.
