Make Mother’s Day a little extra special this year by whipping up quick desserts that get ready in no time, especially if you are working on this special day and still want to surprise your mom. So, this Mother’s Day, we have some easy Mother’s Day dessert recipes that you can bake or prepare to surprise your mom.
1. 5-Minute Fruit Mousse
(Makes 4 servings)
Ingredients
- 2 1/4 cups frozen fruit
- 2 tbsp sugar (or honey)
- 1 egg white
Instructions
- Puree the frozen fruit in a blender, then add the sugar and run it again to combine. Taste and adjust the sweetness.
- Add the egg white and run it again until the whole thing doubles or triples in volume and it turns a lighter shade.
- Once it is ready, spoon the mousse into glasses and garnish with fresh fruits or whipped cream.
- Serve right away or store in the refrigerator for up to 2 hours.
2. Brownie in a Mug
(Serves 1)
Ingredients
- 4 tbsp flour
- 4 tbsp sugar
- 2 tbsp Cadbury cocoa powder
- 2 tbsp water
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
Instructions
- Add all the ingredients into a microwave-safe mug or ramekin, then microwave for 1 minute.
- Bake in the oven at 180°C for 20 minutes, until a toothpick inserted comes out clean.
- Serve straight from the oven.
3. 4-Ingredient Milk Pudding
Ingredients
- 2 cups milk
- ⅓ cup cornstarch
- ¼ cup sugar
- 1 cup coconut, shredded
Instructions
- Add half of the milk into a saucepan and add sugar. Mix until the sugar is dissolved.
- Take a bowl, pour the rest of the milk, add the cornstarch, and mix until fully combined.
- Bring the pan with the milk to a boil, on medium-low heat. Cook for 3-4 minutes until the milk heats up, make sure it doesn’t boil or simmer.
- Stream in the cornstarch mixture into the steaming milk pan and keep stirring until it thickens, which should take around 4 minutes.
- Take a square container, line it with parchment paper, and pour the milk mixture into it. Let the milk pudding rest for around 1-2 hours or until its fully cool.
- Slice the milk pudding into bite-size pieces, then coat with shredded coconut.
4. 5-Minute Chocolate Pudding
(Serves 4)
Ingredients
- 2/3 cup sugar
- 1/4 cup Cadbury Cocoa Powder
- 1/4 tsp salt
- 3 tbsp cornstarch
- 2 1/4 cups milk
- 2 tsp vanilla extract
- 1 tbsp butter, optional
Instructions
- Take a medium saucepan and mix sugar, cocoa, cornstarch and salt with a whisk.
- Pour the milk into the pan and continue whisking. Put the pan on the stove and simmer it over medium heat. Cook it for 1-2 minutes until thick and bubbly.
- Remove the pan from the heat and stir in the vanilla and butter.
- Transfer the liquid into your favorite dessert glass and chill them thoroughly.
5. Chocolate Mousse
Ingredients
- 1 1/2 cups heavy whipping cream
- 1/4 cup Cadbury cocoa powder, sifted
- 1/4 tsp almond extract, optional
Instructions
- Take a chilled mixing bowl, add the whipping cream and whip until frothy and it starts to thicken.
- Next add the powdered sugar and cocoa powder, then carefully mix until soft peaks form.
- If using the almond extract add it and whip until stiff peaks form.
- Spoon the mousse into a piping bag with piping tip and pipe into serving bowls or glasses.
- Serve right away or refrigerate until ready to serve.
6. Easy Vanilla Pudding
Ingredients
(Makes 5 servings)
- 2 cups milk
- ½ cup white sugar
- 3 tbsp cornstarch
- ¼ tsp salt
- 1 tsp vanilla extract
- 1 tbsp butter
Instructions
- Heat the milk in a medium saucepan, over medium heat, until it starts bubbling at the edges.
- Meanwhile, mix the sugar, cornstarch, and salt in a small bowl. Add it to the hot milk, while stirring until smooth. It’s ready when it is thick enough to coat the back of a spoon.
- Remove the saucepan from heat and stir in vanilla and butter.
- Divide the pudding between 5 serving dishes. Chill the pudding in the refrigerator before serving.
7. Coconut Chia Pudding
Ingredients
- 1/3 cup chia seeds
- 400ml can light coconut milk
- 1/4 cup maple syrup
- 2 mandarins, peeled, segmented
- 250 gm strawberries, quartered
Instructions
- Take a bowl, mix the chia seeds, coconut milk and 2 tablespoons of the maple syrup. Seal with a plastic wrap and in the fridge for 6 hours.
- Mix the mandarin and strawberry in a bowl, then add the remaining maple syrup. Stir to mix and let the fruit macerate.
- Spoon this chia mixture into serving bowls or glasses and top with the strawberry mixture.
