You can make any of them to dig into as a dessert after lunch, or prepare a big batch of them to be served as party desserts for your guests.

Pineapple Sorbet

When the weather becomes slightly cooler, and you're slightly uninspired to serve cakes, this light dessert is all you need to start the week on a refreshing note.

Ingredients:

  • 175 gm pineapple chunks
  • 130 gm sugar
  • 110 ml water
  • 1 tbsp lime juice
  • 2 tsp vanilla extract

Method:

  1. Combine pineapple chunks in a blender or food processor, and let them puree until they become a smooth paste.
  2. Then, take a medium saucepan, and mix the pineapple puree with granulated sugar, water, lime juice, and vanilla extract very well.
  3. While you simmer this mixture over moderate heat, you must remember to keep stirring occasionally, until all of the sugar is dissolved.
  4. Take it off the heat and set aside to cool down to room temperature.
  5. Next, you are going to transfer this mixture into an ice cream maker and churn for an hour or so, as per the guidelines for the specific machine.
  6. Once it is churned properly, you must let it refrigerate for at least 3 hours.
  7. Before serving, you can garnish with some mint leaves.

In case you do not have an ice cream machine at your disposal, you need to freeze your pineapple chunks a day before, then blend the chunks in a food processor along with sugar, water, lime juice and vanilla on high speed. Wait till everything comes together, and then scoop out the mixture in an ice cream tray and freeze it overnight.

Pro tips for making the best pineapple desserts

Opt for a mix of fresh and ripe pineapples to give you the best flavour. Freeze the pineapple chunks a day ahead even when using an ice cream maker to aid the sorbet-making process.

Even though it takes some amount of time, it is absolutely crucial to remove the tough outer skin of the pineapple and also its core before using.
