Arany Galuska: What is it, quick sweet recipe of this traditional Hungarian dessert

If you’re someone who’s always on the lookout for something new from the world of desserts, then you’ve come to the right place. In this article, we’ll learn about arany galuska, a Hungarian dessert that has been a beloved dish for generations.

Arany galuska consists of soft, pillowy yeast balls that are coated in melted butter and rolled in a mixture of ground walnuts and sugar. Apricot or plum jam is also used in the recipe sometimes. The yeasted dough balls are then arranged together in a baking dish and baked to golden brown perfection. While it’s known as arany galuska in Hungary, this is the dish that may have inspired monkey bread. Although there is no definite origin story, this dish was probably first a rich cake that was served along with fish and soup on Fridays, which is when Catholics don’t consume meat.

This classic European dish is usually served warm with a dusting of powdered sugar and some vanilla custard or whipped cream.

Here’s a quick sweet recipe that you can make arany galuska at home with:

Ingredients:

  • 1 tbsp active dry yeast
  • 235 ml warm milk
  • 282 gm room temperature butter, divide into two halves
  • 100 gm white sugar
  • 4 eggs
  • Zest of an orange
  • 600 gm flour
  • 1 tsp salt
  • 180 gm ground walnuts
  • 83 gm brown sugar
  • ¾ tsp ground cinnamon
  • 3 tbsp butter cookie crumbs
  • 150 g apricot or plum jam

Instructions:

Add the warm milk into a large mixing bowl, then dissolve the yeast into it. Let it rest for 10 minutes so that the yeast can bloom.

Add about 25 gm (¼) cup of white sugar to this along with orange zest, vanilla, and 141 gm of butter into the milk and yeast mixture.

Gradually incorporate all of the flour into the wet ingredients and mix well until you get a fully formed dough. You can do this by hand or even use a stand mixer.

Cover the prepared dough with a kitchen towel and let it rise for about an hour. The dough will double in size during this time.

Preheat the oven to 180°C and grease a 10-inch round cake tin lightly with some butter. Set it aside.

Melt the rest of the butter, about 140 gm, either in a small saucepan or the microwave.

In another bowl, mix together ground walnuts, butter cookie crumbs, the rest of the white sugar, and cinnamon.

Punch air from the risen dough then roll it out into a circle that is about ½ inch thick.

Use a 1-inch cookie cutter to make the dough balls, then dip them in melted butter, followed by the walnut and cookie mixture.

Rinse and repeat these steps, and arrange each yeasted ball in the greased cake tin together.

After you’ve created the first layer of the yeasted balls, drop dollops of jam over it.

Then repeat the same process of creating more balls, dipping them in butter, and arranging them in the baking tin again.

Bake in the oven for 35 to 45 minutes or until the top is golden brown.

Once the arany galuska is cool enough you can cut it or pull it apart with your hands.

You can have it for breakfast or for dessert. Make some homemade custard either by scratch or with a box mix. It will go really well with this dish. Else, serve it with some ice cream.
