Best Sweet Recipes to Use Up Overripe Bananas From Pancakes to Cakes

Love bananas or want to get rid of the overripe ones you cannot finish one your own? Then this article is for you, for we’ve got a peanut butter banana brownie recipe, banana chocolate chip pancake recipe and a recipe to make banana cake. They range from easy, moderate to a little pro-level and can be made on your stovetop or oven, depending on the recipe you choose. 

1. Simple Banana Cake Recipe

Ingredients

  • 200 gm bananas (overripe - brown spots or patches on skin)
  • 120 gm all purpose flour
  • 1 tsp baking powder
  • 3 eggs (room temperature)
  • 100 gm powdered sugar
  • 115 gm unsalted butter (melted)

Instructions

  • Preheat the oven to 190°C, while you grease a square cake pan, the same ones you use for brownies. A loaf pan will do too. Then use parchment paper on top of the greased pan. 
  • Next, take the overripe bananas and mash them with a fork. 
  • Mix flour and the baking powder in a bowl. Set aside.
  • Take another bowl, crack the eggs and fix the bowl to a stand mixer or use a hand mixer. Beat the eggs on medium speed setting for 1 minute and then increase to high speed and beat for another 2 minutes. 
  • Add the sugar next, mix on high speed for around 2-3 minutes. The liquid will be foamy and frothy. 
  • Add the mashed bananas you had set aside earlier to the egg-sugar mixture. Stir a few times with a spatula to combine.
  • Heat butter in a microwave for a few seconds to for a few seconds to melt it. 
  • Next, take the flour and divide it into 3 parts. First, add half of the melted butter into the egg mixture and stir with a spatula. Then add a third of the flour into the egg mixture. Stir a few times to carefully incorporate it. Add another batch of floor, mix, then the butter, mix and then the flour and mix again. Don't overmix, just enough so that no dry streaks of flour can be seen. 
  • If there are bubbles let them be, they are good for the cake.
  • Pour the batter into the pan and set the timer to 40-45 minutes. Around 20-25 minutes into baking, pause and cover the top of the pan with aluminum foil. By this time the cake will have set at the top. 
  • Poke the cake with a skewer in the center and if it comes out clean, your banana cake is done and kids will love it
  • Remove the cake from the oven and let it cool outside.

2. Banana Chocolate Chip Pancakes Recipe

Ingredients

  • 2 large ripe bananas
  • 4 eggs
  • 60 gm flour (can be substituted with gluten-free flour)
  • Chocolate chips for the batter
  • Oil for cooking 
  • Optional: Pinch of cinnamon, ½ tsp vanilla

Instructions

  • Take a bowl and mash the two bananas with a fork, getting them as smooth as possible.
  • Crack in the eggs and whisk until smooth. Then add the flour, cinnamon and vanilla, if you are using them. Stir to combine them. Finally, add the chocolate chips and give a quick mix to incorporate the chocolate chips. 
  • Heat your non-stick pan or iron skillet over medium flame. You can ditch the oil if your pan is non-stick. 
  • Once heated, scoop up a quarter of the batter and spread on the pan leaving ample space for the pancake to expand.
  • Cook until bubbles start to appear on the surface, then flip and repeat.
  • Repeat with the rest of the batter and use oil or butter to grease if needed. 

3. Peanut butter banana brownie recipe

Ingredients

  • 2 ripe bananas
  • 200 gm sugar
  • 130 gm unsalted butter, melted (extra for greasing)
  • 1 tsp vanilla extract
  • 100 gm flour
  • 40 gm Cadbury cocoa powder (some extra for dusting pan)
  • ⅛ tsp salt
  • 120 gm creamy peanut butter

Instructions

  • Preheat the oven to 180°C and then get to prepping the brownie batter. 
  • Take a bowl, and mash the bananas first then add the sugar and butter, vanilla essence and mix until creamy and smooth. 
  • Next add the flour, cocoa powder, salt, and whisk to combine. 
  • Use the remaining butter to grease a brownie pan and use the extra cocoa powder to dust the pan.
  • Pour the batter into the prepared baking pan.
  • Now, take a spoon and scoop out portions of peanut butter and drop it on the batter. Then swirl the peanut butter into the batter using a fork or knife. 
  • Bake for 30 minutes until the center doesn't jiggle, but is still soft. Let the brownies cool before you enjoy them.
