1. Blueberry Lemon Cheesecake Bars
These cheesecake bars are a zesty, tangy delight that provides the perfect contrast to the creamy filling.
Ingredients:
- 150 gm Graham cracker crumbs:
- 85 gm Unsalted butter
- 250 gm Cream cheese
- 100 gm Granulated sugar
- Zest of 1 lemon
- 5 ml Fresh lemon juice
- 5 ml Vanilla extract
- 2 Eggs
- 150 gm Fresh blueberries
- 5 gm All-purpose flour
How to Make:
- Preheat your oven to 180°C and then grease the baking pan with oil and line it with parchment paper.
- In a bowl, mix the graham cracker crumbs with melted butter. Then press this mixture firmly into the bottom of the pan.
- In another bowl, beat the cream cheese, sugar, lemon zest, lemon juice, and vanilla until smooth. Gradually add one egg at a time. Beat them well after each addition. Make sure the entire mixture is smooth.
- Toss the blueberries with some flour. This will prevent the berries from going down to the base.
- Mix the blueberries to the cream cheese mixture and pour them over the crust.
- Bake for 25-30 minutes at 180°C. Let it cool before slicing into bars. Chill for at least two hours in the refrigerator before serving.
2. Blueberry Lavender Ice Cream
It's a creamy, dreamy concoction that marries the delicate floral notes of lavender with the juicy sweetness of blueberries. It's the perfect treat to cool off on a hot summer day, and it's as fancy as it sounds!
Ingredients:
- 250 ml Heavy cream
- 250 ml Whole milk
- 150 gm Granulated sugar
- 10 gm Fresh or dried lavender
- 200 gm Fresh blueberries
- 5 ml Lemon juice
- 5 ml Vanilla extract
How to Make:
- In a saucepan, combine the milk, 100 gm of sugar, and lavender. Let it simmer for some time until the sugar is dissolved and the light lavender hue takes place. Once it’s done, take it out of the gas and strain the milk to remove the lavender.
- In a blender, purée the blueberries with the remaining sugar, and lemon juice.
- Now mix the blueberry puree with the lavender milk very well. Strain it to make it smoother. make sure that the mixture is creamy enough to create a rich ice cream.
- Pour the mixture into an ice cream maker and churn vigorously. Transfer the ice cream to a container and freeze until firm.
- After overnight, take it out of the freezer and serve it with some fresh blueberries on top.
3. Blueberry Almond Galette
Think of blueberry desserts as the laid-back, rustic cousin of the pie. It's free-form, fuss-free, and filled with juicy blueberries that burst with flavor.
Ingredients:
- 150 gm All-purpose flour
- 50 gm Almond meal
- 100 gm Cold unsalted butter
- 50 gm Granulated sugar
- 2 gm Salt
- 60 ml Ice water
- 300 gm Fresh blueberries
- 5 gm Cornstarch
- 5 ml Lemon juice
- 30 gm Sliced almonds
How to Make:
- In a food processor, combine the flour, almond meal, sugar, and salt. Then add the butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water until the dough starts to form.
- Once the dough is formed, wrap it in plastic, and refrigerate for at least 30 minutes.
- Preheat your oven to 200°C. Roll out the dough on a floured surface and make a circle. Then transfer it to a parchment-lined baking sheet. Cut the sides to give it the shape of the baking sheet.
- In a bowl, toss the blueberries with sugar, cornstarch, and lemon juice.
- Spoon the blueberry mixture onto the center of the dough, leaving a 2-inch border.
- Then fold the edges of the dough over the blueberries. Make patterns of pleats at the border to secure it.
- Brush the crust with a little water and sprinkle with sugar. Decorate it with sliced almonds. Bake for 25-30 minutes at 200°C. When it is ready, the crust will turn golden and the blueberries will be bubbling.
