Holi is incomplete without a plate of warm syrup-soaked malpuas . A traditional Indian sweet that has graced festival platters for ages, malpua is as soft and crispy edges Indian style pancake and has its fair share of sugar syrup drenched within. It also tastes great paired with thick and creamy rabri. But then again, what about some fusion twist? Take malpua, and just pour rich molten chocolate on it.

Classic Malpua with a Twist of Chocolate Recipe

Ingredients:

  • 1 cup all-purpose flour (maida)
  • 1/4 cup semolina (sooji)
  • 1 cup milk
  • 2 tbsp sugar
  • 1/2 tsp fennel seeds (saunf)
  • 1/4 tsp baking soda
  • Ghee for frying
  • 1 cup sugar syrup (made with equal measures of sugar and water, sweetened with cardamom)
  • 1/2 cup rabri
  • 1/2 cup dark chocolate melted

Method:

  1. Take a mixing bowl and put together flour, semolina, sugar, fennel seeds, and baking soda. Add milk gradually, whisking to form a smooth batter. Let it rest for 30 minutes.
  2. Heat ghee in a pan and pour small ladlefuls of batter into the hot ghee. Fry until golden brown and crisp at the edges.
  3. Soak the fried malpuas in warm sugar syrup for a few seconds, then put on a plate.
  4. Drizzle generously melted dark chocolate over the malpuas.
  5. Serve with a side of thick, chilled rabri and relish the indulgence.

Chocolate Infused Batter: Add cocoa powder or melted chocolate into the batter. This way, each bite is filled with a deep, chocolaty flavor without overwhelming the classic flavor of malpua.
