Finskapinner from the Netherlands

Ingredients:

Biscuits:

  • ½ cup of almonds
  • ½ cup of sugar
  • 2 ⅓ cups of wheat flour
  • 1 cup of butter

Decoration:

  • 1 egg white
  • ½ cup of almonds

Instructions:

  • Blanch the almonds and peel them. Also, preheat your oven to 200°C and prepare your baking tray with parchment paper.
  • Then blend the blanched almonds in a food processor until you get a sandy texture.
  • Empty the food processor and add the sugar, flour, and softened butter, then blend again.
  • You can transfer the dough to a flat surface and knead it.
  • Roll it out into a finger-thick long log, then cut into 5 cm sticks.
  • Brush each stick with the beaten egg white and press a tablespoon's worth of crushed almonds onto them.
  • Place the cookies onto the parchment paper-lined baking tray and bake until golden. This should take about 12 minutes.
  • Cool on a wire rack before eating.

Florentine Biscuit from Italy

Ingredients:

  • ¼ cup of salted butter
  • ¼ cup of brown sugar
  • 2 tbsp of corn syrup
  • ⅓ cup of plain flour
  • ¼ cup of glace cherries
  • ¾ cup of slivered almonds
  • ⅓ cup of chopped pistachios
  • 1 cup of Cadbury Bournville chocolate (chopped)
  • 4 tbsp of orange zest

Instructions:

  • Preheat the oven to 180 C and line two baking sheets with baking paper.
  • Melt the butter, corn syrup and sugar in a saucepan over low flame, then add the flour, cherries, flaked almonds, pistachios and orange zest.
  • Spoon the batter using a tablespoon onto the baking sheets.
  • First bake the cookies in the preheated oven for 10 minutes. Let them cool for about 2-5 minutes so that they can firm up and become crisp.
  • Melt the chopped Cadbury Bournville in a microwave-safe bowl.
  • Then smear the melted chocolate onto your freshly baked florentines. You can also use a fork to shape wavy lines on top of the cookie.

Flour Kurabiye from Turkey

Ingredients:

  • ⅔ cup of softened butter
  • ¾ cup of sugar
  • 2 cups of refined flour
  • 1 tsp of vanilla extract
  • 1 tsp of baking sugar
  • A cup of powdered sugar

Instructions:

  • Preheat the oven to 200°C and line a baking tray with parchment paper.
  • Combine all the ingredients in a large bowl and knead until you achieve a smooth, pliable dough.
  • Divide the dough into four parts, then roll each part into a sausage-like shape.
  • Using a fork, create a lengthwise pattern on top of each sausage, and cut them into rectangles. Place the shaped cookies on the prepared baking tray and bake in the preheated oven for 10 minutes.
  • After the initial 10 minutes, reduce the oven temperature to 150°C and continue baking for an additional 10 to 15 minutes.
  • Sprinkle the warm cookies with powdered sugar.
