Cream cheese isn't just for bagels. It’s the secret weapon in some of the most indulgent desserts. With its velvety texture and slight tang, it is a dessert dynamo, turning any sweet treat into a rich, indulgent bite of bliss. Here are some of the most delicious desserts to make with cream cheese, with quirky twists, drool-worthy flavors, and step-by-step instructions to make you the hero of dessert time!

1. The Classic No-Bake Cheesecake:

This classic no-bake cheesecake is like a fluffy cloud of tangy sweetness with a crumbly, buttery base that crumbles like your willpower on a diet. You get both the creamy and crumbly texture of Chocolate Tart, without the help of an oven.

Ingredients:

  • For the crust:
    • 200 gm digestive biscuits (or graham crackers)
    • 100 gm melted butter
  • For the filling:
    • 300 gm cream cheese
    • 150 gm powdered sugar
    • 300 ml heavy cream
    • 5 ml vanilla extract
    • 1 lemon (zested and juiced)

Procedure:

  1. In a food processor, crush the digestive biscuits until they resemble fine breadcrumbs. Stir in the melted butter until everything is well coated.
  2. Press the mixture into the bottom of a springform pan (around 20 cm diameter), making sure it’s evenly spread. Pop it in the fridge while you work on the filling.
  3. In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy. Now, add the vanilla extract, lemon zest, and juice.
  4. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
  5. Pour the cream cheese mixture over the crust, smoothing it out with a spatula. Let it chill in the fridge for at least four hours.
  6. Before serving, top with fresh berries, a drizzle of caramel, or even a cheeky spoonful of Chocolate spread. Cut into this creamy concoction and brace yourself for dessert nirvana.

2. Lemon Cream Cheese Bars:

These lemon cream cheese bars are as zesty and will brighten your day with every citrusy bite. Serve these as sides if the center of your dessert table is occupied by Truffle Cake.

Ingredients:

  • For the crust:
    • 200 gm all-purpose flour
    • 50 gm powdered sugar
    • 150 gm cold butter (cubed)
  • For the filling:
    • 250 gm cream cheese
    • 100 gm powdered sugar
    • 3 large eggs
    • 120 ml lemon juice (freshly squeezed)
    • 10 gm lemon zest

Procedure:

  1. Preheat your oven to 180°C. Line a 20 x20 cm baking pan with parchment paper for easy removal.
  2. In a bowl, combine flour, powdered sugar, and cubed cold butter. Rub the butter into the flour mixture until it resembles coarse crumbs. Press this into the bottom of your pan and bake for 15 minutes or until lightly golden.
  3. While the crust cools, whip up the filling by beating together the cream cheese and powdered sugar until smooth. Add the eggs one at a time, followed by the lemon juice and zest.
  4. Pour this luscious, lemony mixture over the baked crust and bake at 180°C for another 25-30 minutes, or until the filling is set but still a little jiggly in the center.
  5. Allow the bars to cool completely before cutting into squares (pop them in the fridge for faster cooling). Dust with powdered sugar for an extra touch.

3. Red Velvet Cream Cheese Brownies:

Brownies meet red velvet cake in this decadent, chocolatey, and slightly tangy dessert. You can try this as a new twist in Sizzling Brownie with Ice Cream.

Ingredients:

  • For the brownie base:
    • 200 gm sugar
    • 115 gm unsalted butter (melted)
    • 2 large eggs
    • 5 ml vanilla extract
    • 15 ml red food coloring
    • 30 gm cocoa powder
    • 120 gm all-purpose flour
    • 5 gm salt
  • For the cream cheese swirl:
    • 200 gm cream cheese (softened)
    • 60 gm sugar
    • 1 egg yolk
    • 5 ml vanilla extract

Procedure:

  1. Preheat the oven to 180°C. Line a 20 x 20 cm baking pan with parchment paper.
  2. In a large bowl, whisk together the melted butter and sugar until combined. Add the eggs, vanilla extract, and red food coloring. Stir until everything is a vibrant red.
  3. Sift the cocoa powder, flour, and salt into the red batter, folding gently until just combined.
  4. In a separate bowl, beat the softened cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy.
  5. Pour the red velvet brownie batter into the pan, saving a small portion to swirl on top. Dollop spoonfuls of the cream cheese mixture over the brownie layer. Then, spoon the reserved red velvet batter on top and swirl the two together using a knife to create a marbled effect.

Bake for 25-30 minutes at 180°C, or until a toothpick inserted in the center comes out mostly clean. Let them cool before cutting into squares. These brownies are almost too pretty to eat.
