Ingredients
For the Crust:
- 120 gm cream-filled chocolate sandwich cookies
- 30 gm hazelnuts, raw or roasted, skinned
- 30 gm unsalted butter, softened
For the Filling:
- 225 gm cream cheese
- 200 gm hazelnut-chocolate spread
- 120 gm sour cream
- 2 large eggs (or substitute with 120 gm yogurt for egg-free)
- 30 gm granulated sugar
- 30 gm mini chocolate chips
Method
- Preheat your oven to 175°C. Line a 12-cup muffin tin with paper liners and lightly spray them with vegetable oil to prevent sticking.
- In a food processor, blend the cookies, hazelnuts, and softened butter until the mixture resembles fine crumbs. Divide the mixture evenly among the muffin cups. Use the bottom of a flat glass to firmly press the crumbs into a compact crust. Bake for five minutes, then set aside to cool slightly.
- Wipe the food processor clean and add the cream cheese, hazelnut-chocolate spread, sour cream, eggs (or yogurt), and sugar. Blend until the mixture is smooth and creamy.
- Spoon the filling into the prepared crusts, filling almost to the top. If you have a little leftover batter, set it aside or use it for a bonus mini cheesecake. Sprinkle the mini chocolate chips over the tops.
- Bake in the preheated oven for 20 minutes, or until the cheesecakes have risen slightly, and the tops are slightly cracked.
- Allow the cheesecakes to cool in the tin for 10 minutes. Then, transfer the muffin tin to a wire rack and freeze for an additional 10 minutes to set. Serve chilled or at room temperature.

Method:
- Line an eight-inch round cake pan with enough plastic wrap to extend 10 cm beyond the edges. Crush 120 gm chocolate wafers into fine crumbs using a rolling pin or food processor.
- In a large bowl, beat the cream cheese with an electric mixer until fluffy, about three minutes. Add the chocolate syrup and water, then mix until smooth and creamy.
- Arrange nine whole chocolate wafers in an overlapping ring at the bottom of the prepared pan, with one wafer in the center. Spoon one-fourth of the cream cheese mixture over the wafers and spread it evenly.
- Repeat the process with alternating layers of wafers and cream cheese mixture, finishing with a layer of 10 wafers on top. Gently fold the overhanging plastic wrap over the cake and tap the pan lightly to settle the layers.
- Refrigerate for at least eight hours or overnight.
- To serve, carefully invert the cake onto a plate and peel off the plastic wrap. Press crushed chocolate wafer crumbs onto the sides of the cake for an extra decorative touch.
