Crushed Pineapples: Experience the Dance of Sweet and Tangy Flavors

Pineapple Sandesh Recipe

The classic Bengali Sandesh is the epitome of culinary finesse. Crushed pineapple gives a global spin to the authentic and indigenous dessert tradition of Eastern India.

  • 500 gm fresh paneer.
  • 200 gm crushed pineapple.
  • 100 gms powdered sugar
  • 1 tbsp vegetable oil
  • 1 teaspoon cardamom powder
  • Pineapple slices (for garnish)

Instructions:

  1. In a blender, puree the chopped pineapple until smooth. Set aside. You can use a sieve to make sure the puree is lump-free.
  2. In a large bowl, mash the fresh paneer until smooth and soft. Add powdered sugar and cardamom powder, and mix well until the sugar is fully incorporated.
  3. Heat 1 tablespoon of oil in a non-stick pan over low heat. Add the mashed paneer mixture and stir continuously for four to five minutes until it begins to thicken slightly. Avoid overcooking, as this will make the sandesh hard.
  4. Pour in the pineapple puree and cook for another couple of minutes, stirring gently. Once the mixture starts to leave the sides of the pan and thickens to a soft dough consistency, you'll know it's done. So turn the heat off.
  5. Allow the mixture to cool slightly. Apply oil on your palms. Shape the sandesh into small round discs or squares, depending on your preference. You can use a mold for fancy shapes if desired.
  6. Garnish each piece with a small slice of pineapple on top. Chill the pineapple sandesh in the refrigerator for a couple of hours before serving for the best taste.

Pineapple Chia Pudding

A chia pudding is a respite for busybees. It takes 5 minutes of your time to prepare and it gives you the much-required boost of health and taste that we always look for in our diets.   • 60 gm chia seeds
  • 400 ml almond milk (or any milk of your choice)
  • 200 gm fresh pineapple (chopped)
  • 15 ml maple syrup or honey
  • 5 ml vanilla extract
  • 15 gm crushed almonds for garnish (optional)

Procedure:

  1. Mix chia seeds with almond milk, vanilla extract, and maple syrup or honey in a glass bowl. Stir well to ensure the seeds are evenly distributed and not clumping together. This is necessary to get that smooth texture of pudding.
  2. Let it sit for about five minutes, then stir again to break up any lingering clumps. Cover the bowl and refrigerate overnight, preferably.
  3. Take it out in the morning, add crushed pineapple. Drizzle some honey if you’d like. The pineapple provides freshness of taste and the tang alleviates your senses.
