We love indulging in delectable desserts after a heavy meal. When the sweet note touches our taste buds, there is a sense of satisfaction. Be it cakes, cookies, pies, puddings, fudge or any other dessert, one can never say no to these sweet treats. When it comes to nostalgic connection with them, rich and creamy custard has always been a part of our childhood memories.

Made with very basic pantry ingredients like milk, cream, sugar and eggs, this simple yet delicious delight has always made us happy. Besides relishing custard in a bowl with fruits and other toppings, it is also used as a filling for pies and doughnuts. Commonly it is combined with chocolate, nuts, caramel and fruits, but if you are looking for some unique dishes, here are three interesting recipes for you:

Matcha Green Tea Custard

Combined with matcha, a gorgeous green powder, this is a fusion of sweetness with the traditional Japanese tea. This dessert recipe perfectly brings out the creaminess of custard along with the bright tone of matcha.

Ingredients

  • 5 large egg yolks
  • 6 tbsp raw honey, divided
  • 2 tbsp arrowroot
  • 2 tbsp matcha powder
  • 1/4 tsp ground cinnamon
  • 3 cups half-and-half cream
  • 1/4 tsp sea salt
  • 1/4 cup organic unsalted butter, cut into pieces
  • 2 tsp pure vanilla extract
  • 2 oz 70% dark chocolate, shaved
  • 1/2 cup toasted unsalted walnut pieces
  • 1/4 cup pomegranate seeds

Method

  • In a heat-proof bowl, whisk together egg yolks, 2 tbsp honey, arrowroot, matcha, and cinnamon. Keep it aside. In a small saucepan, heat cream, remaining 1/4 cup honey and salt on medium flame. Stir constantly with a rubber spatula, scraping bottom of pan, until liquid just starts to simmer. Then turn off the heat.
  • Drizzle hot cream mixture slowly into matcha mixture, whisking vigorously. Next transfer the matcha mixture back to the saucepan. Reduce heat to medium and cook until liquid has thickened, stirring continuously, approximately 1 to 2 minutes.
  • Remove from heat; mix in butter and vanilla. Divide custard among 6 serving bowls. Garnish with chocolate, walnuts and pomegranate seeds. Serve chilled.

Avocado Frozen Custard

We usually use fruits like mango, pineapple, pomegranate and strawberry for custards. But avocado can also be a great addition to your recipe. It adds a luxurious touch to the dish by giving a creamy texture. Use large avocados, if possible, to get the best results.

Ingredients

  • 3 ripe avocados. seeded peeled and diced
  • 1 tbsp freshly squeezed lemon juice
  • 1 Tbsp lime juice
  • 1 ½ cups whole milk
  • 1/2 cup sugar
  • 1 cup heavy cream

Method

  • In a blender add the avocado, lemon juice, lime juice, milk and sugar and blend until smooth. Pour the mixture into a large bowl and stir in the heavy cream. Taste the mixture and adjust lime juice accordingly.
  • Refrigerate the custard base until cold and transfer to an ice cream machine. Churn well. Serve immediately or store in the freezer until the desired consistency is reached.

Cardamom Custard

Adding a hint of cardamom to your regular custard recipe will not only give it a unique aroma but also adds a herbal warmth. It is easy to prepare and makes a perfect dessert to relish after a family dinner. You can also serve it over your French toast.

Ingredients

  • 1/2 cup crème fraiche
  • 2 cups whole milk
  • 1 tsp vanilla extract
  • 4 cardamom pods, slightly crushed
  • 4 egg yolks, room temperature
  • 1 tbsp cornstarch
  • 1/3 cup sugar

Method

  • In a large saucepan, heat the crème fraiche, milk, vanilla extract and cardamom on medium heat until hot. Remember not to boil it. Turn the heat to low and simmer for about 15 minutes.
  • In a mixer, beat egg yolks, cornstarch and sugar until creamy on high speed. With the mixer on medium speed, slowly pour the milk mixture into the egg mixture. Ensure that the eggs don't get too hot and curdle.
  • Once completely combined, pour the custard from the mixing bowl back into the saucepan through a fine-meshed strainer.
  • Place back on the stove over low heat, stirring until the custard thickens. It will take about 10-12 minutes.
  • Switch off the heat and let cool. Enjoy.
