1. The Classic Chocolate Cake

  • 120 ml vegetable oil
  • 10 ml vanilla extract
  • 240 ml boiling water

Instructions:

  1. Preheat your oven to 175°C. Grease two 9-inch round cake pans. No buttering shortcuts: give those pans the love they deserve.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Feel free to mix with a little attitude; it adds flavor.

  1. Melt the chocolate in a heatproof bowl over simmering water or in the microwave. Let it cool slightly.
  2. Whisk the egg yolks and sugar until light and frothy, then mix in the cooled chocolate.
  3. In another bowl, beat the egg whites until they form stiff peaks.
  4. Gently fold the whipped cream into the chocolate mixture. Fold the egg whites in as well. Don’t rush this: good mousse takes patience.
  5. Chill for at least two hours before serving. Savor the smoothness of every bite, because life’s too short to rush through mousse.

4. The Molten Chocolate Lava Cake

For when you need your dessert to come with a surprise center, like a plot twist in a rom-com. The chocolate lava cake will be an upgrade in your culinary skill if you can perfect a basic chocolate sponge cake.

Ingredients:

  • 115 gm unsalted butter
  • 170 gm Bournville dark chocolate
  • 2 large eggs
  • 2 large egg yolks
  • 50 gm sugar
  • 30 gm all-purpose flour
  • A sprinkle of powdered sugar

Instructions:

  1. Preheat your oven to 220°C. Grease four ramekins (or use muffin tins).
  2. Melt butter and chocolate together, either in a double boiler or the microwave (be cautious, chocolate burns quickly).
  3. In a separate bowl, whisk together eggs, yolks, and sugar until frothy, like a dreamy cappuccino. Slowly add the melted chocolate mixture, then fold in the flour.
