Delicious S'more Desserts to Relive Your Campfire Memories, from brownie bars to cookies

Remember those moments from childhood, when you’d be plopped up in front of a TV, and watch all the movies on your favorite channel? The one scene that stays in all of our heads rent-free, till date, is the camping scene from all those holiday movies. A bunch of friends and family curled up in front of a bonfire, telling stories and snacking on hot and delicious s’mores.

We still don’t know what was more comforting — knowing that there’s no school tomorrow, or just gawking at those delicious fluffy, slow-roasted clouds of happiness.

S’more desserts are one of the few delectables that can be categorized as — desserts to make with strawberries — since the inclusion of fruits is a popular option. When you can’t think of anything and want some super easy and quick desserts, your go-to solution are s’mores. They are not only delicious but can also be included among the party desserts in case you’re planning a winter bash for your loved ones.

S'mores Brownie Bars:

Ingredients:

  • 200 gm graham crackers, crushed
  • 100 gm butter, melted
  • 150 gm Cadbury Bourneville Dark Chocolate, chopped
  • 100 gm unsweetened cocoa powder
  • 200 gm sugar
  • 3 eggs
  • 100 gm all-purpose flour
  • 1 tsp vanilla extract
  • 200 gm mini marshmallows

Method:

  1. To prepare the base, you need to first preheat the oven to 180°C. Then take a bowl, and mix the crushed graham crackers with melted butter until well combined. Press the mixture into the bottom of a greased baking dish to form a firm base.
  2. After this, you should take a heatproof bowl, and melt the Cadbury Bourneville Dark Chocolate over a pot of simmering water, stirring occasionally. Once melted, remove it from the heat and let cool slightly. In a separate bowl, whisk together unsweetened cocoa powder, sugar, and eggs until smooth. Add the melted chocolate, flour, and vanilla extract. Mix the ingredients until they are all well combined.
  3. Now, pour the brownie batter over the graham cracker base, spreading it evenly. Bake in the preheated oven for around 25-30 minutes or until a toothpick inserted into the centre comes out with a few moist crumbs.
  4. Once done, remove the brownie from the oven and sprinkle some mini marshmallows evenly over the top. Return to the oven and bake for an additional five minutes, or until the marshmallows are golden and toasted.
  5. Let the s'mores brownie bars cool completely before cutting them into squares. Serve them to your loved ones and enjoy!

S'mores Parfait Cups:

Ingredients:

  • 150 gm graham crackers, crushed
  • 50 gm butter, melted
  • 200 ml heavy cream
  • 100 gm powdered sugar
  • 200 gm marshmallow fluff
  • 100 gm chocolate chips, melted
  • 50 gm mini marshmallows for garnish

Method:

  1. To prepare the crust, you need to first take a bowl, and combine the crushed graham crackers with melted butter. Mix the ingredients until the crumbs are well-coated. Divide the mixture among individual serving cups, pressing it down to form a base.
  2. Then, take a mixing bowl, and whip the heavy cream with powdered sugar until soft peaks form. Fold in marshmallow fluff till it is well combined.
  3. Spoon a layer of the cream mixture over the graham cracker crust in each cup. Drizzle a layer of melted chocolate over the cream. Repeat the layers until the cups are full.
  4. Top each parfait with a few mini marshmallows and drizzle some melted chocolate over it. Chill in the refrigerator for at least one hour before serving to allow the flavors to blend.

S'mores Chocolate Chip Cookies:

Ingredients:

  • 200 gm all-purpose flour
  • 100 gm graham cracker crumbs
  • 1 tsp baking soda
  • 100 gm butter, softened
  • 150 gm brown sugar
  • 100 gm white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 150 gm chocolate chips
  • 100 gm mini marshmallows

Method:

  1. First and foremost, preheat your oven to 180°C and line a baking sheet with parchment paper.
  2. To prepare the dough, you need to take a bowl and mix the flour with graham cracker crumbs, and baking soda. In another bowl, cream the softened butter with brown sugar and white sugar until it is light and fluffy. Beat in the eggs and vanilla extract until the ingredients are well combined.
  3. Now, gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in chocolate chips and mini marshmallows.
  4. Once done, drop spoonfuls of dough onto the prepared baking sheet, spacing them apart. Bake for around 10 to 12 minutes or until the edges are golden and the marshmallows are slightly toasted.
  5. Finally, allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve and enjoy your delicious s'mores cookies!
