Dessert Recipes Using Pineapple: Pina Colada Bundt Cake, Pineapple Sponge Pie

Ingredients:

  • 240 gm refined flour

  • 85 gm butter

  • 3 tsp baking powder
  • 4 tsp vanilla extract

Method:

  1. You have to start by preheating the oven to 180°C.
  2. In a medium bowl, you need to whisk together flour, sugar, and baking powder until everything is well mixed.
  3. To the dry ingredients, you have to then add in the softened butter until its texture is crumbly.
  4. You then have to proceed to beat in eggs, pineapple juice, and vanilla extract in another bowl.
  5. Next, pour the egg mixture over the flour mixture, and vigorously stir everything into a homogenous mix.
  6. At this step, you have to remember to fold in frozen, crushed pineapples.
  7. Then, you can pour this batter into a tray, and let it bake for 40 to 45 minutes

Pineapple Pina Colada Bundt Cake

Ingredients:

  • 250 gm butter
  • 400 gm sugar
  • 3 large eggs
  • 260 gm flour
  • 95 gm pineapple juice
  • 110 gm coconut cream
  • 3 tsp baking powder
  • 4 tsp vanilla extract
  • 210 gm pineapple

Method:

  1. Start by greasing a large bundt pan with butter.
  2. Using an electric mixer, you have to beat butter and sugar in a large bowl until light and fluffy.
  3. To the same light mixture, beat in eggs one at a time, whisking really well after each addition.
  4. In another bowl, you have to whisk together flour, baking powder, and pineapple juice.
  5. Then, pour the combination of baking powder, flour and pineapple juice into the butter mixture, and stir until just combined. You must take care to not over mix this.
  6. Then, you can stir in coconut cream, vanilla extract, and crushed pineapple with the batter.
  7. After that, it's a matter of you pouring the batter into the greased bundt pan.
  8. You have to let it bake for 50 to 55 minutes.
  9. Once it is baked, you can optionally drizzle warm caramel syrup or a decadent maple syrup on it before serving.

Pineapple and Coconut Cream Tarts

Ingredients:

  • 20 puff pastry
  • 210 gm condensed milk
  • 110 gm cream
  • 60 gm coconut
  • 14 ml vanilla extract
  • 200 gm pineapple

Method:

  1. You have to start by preheating the oven to 200°C.
  2. Then, stack the puff pastry sheets and then roll out to 4 mm thickness.
  3. After that, you have to carefully cut out circles to the pastry using a cookie cutter.
  4. In a big bowl, you have to mix condensed milk, heavy cream, coconut and vanilla extract.
  5. Then, pour this mixture on individual pastry circles, leaving a border of about 1.5 inch on the edge of the pastry.
  6. Fold the pastry edges in the form of a triangle.
  7. Then, you need to gently brush the small tarts with a beaten-egg egg wash, and then bake for 20-25 minutes.
  8. Before serving, you can dust it with some confectioners’ sugar.

Tips to make the best pineapple desserts

  1. Before you start cooking with pineapples, you must remove the skin, core them properly and freeze it in ziplock bags to make it easier to cook with the fruit. Fresh pineapples may become too messy at times to work with, especially items that need the fruit to be pureed. Further, freezing the pineapple chunks makes the puree much thicker in consistency as opposed to fresh pineapples.
