Coffee Mousse:

If you aren't a fan of chocolates, you will definitely be a fan of coffee, won't you? After all, caffeine is known to give you that much-needed energy boost without the unnecessary sugar. This coffee mousse, with its light texture, is perfect for those evenings when you just want to indulge in a healthier alternative to a choco coffee pastry slice.

Ingredients:

  • 251 ml coffee
  • 302 ml cream
  • 203 gm sugar
  • 3 tbsp coffee
  • 1 tsp vanilla extract

Method:

  1. First, you have to start by brewing some strong coffee and then letting it cool down.
  2. Then, in a large bowl, you have to whip some heavy cream until stiff peaks form.
  3. In another bowl, you are going to mix some granulated sugar, unsweetened instant coffee, and vanilla extract.
  4. Then, you can fold the sugar mixture into the whipped cream until well combined.
  5. At this step, you will stir in the cooled coffee.
  6. Next, you need to spoon the mixture into individual serving cups. To give it a more sophisticated look, you can use your fancy cutlery.
  7. You need to let them chill in the refrigerator for at least two and a half hours, and then serve and dig in!

Date Rolls:

This dish forms a dessert that exudes softness, crunchiness, and full of natural sweetness. You're going to love date rolls if you want a naturally sweet dish that won't require artificial sweeteners.

Ingredients:

  • 201 gm dates
  • 152 gm flour
  • 53 gm sugar
  • A pinch of salt
  • 101 ml butter
  • 2 tsp vanilla extract

Method:

  1. First, you have to pit the dates and chop them into small pieces.
  2. In a big mixing bowl, you need to mix flour, granulated sugar, and salt.
  3. Then, you can add some softened unsalted butter and mix the ingredients until you get a crumbly texture.
  4. At this step, you can stir in the vanilla extract and chopped dates.
  5. You have to use your fingers to roll out the dough-like mixture two cm in thickness.
  6. You are going to cut it to your desired shapes.
  7. Then, you have to bake them at 180°C for around 15 to 20 minutes.

Caramelized Pear Tart:

  • 251gm puff pastry
  • 4 pears
  • 2 eggs
  • Caramel sauce

Method:

  1. You have to preheat the oven to 200°C.
  2. You need to roll out a puff pastry to two and a half cm of thickness.
  3. You have to cover half of the pastry with slices of pears.
  4. Then, you will fold the other half over the pears.
  5. Next, you can brush the edges of the pastry with a beaten egg mixture.
  6. You are going to let it bake for around 25 to 30 minutes.
  7. Once it is out of the oven, you have to slice it in the shape of rectangles, and dribble caramel sauce over the top.

If you want to experiment, you can add zest from citrus fruits like lemons or oranges, or spices of different kinds, for varied flavors in the desserts. For a super aesthetic appeal, you can always garnish them with fresh flowers or herbs. Given that the desserts do not contain chocolate, you can easily pair them with fresh fruits or whipped cream while serving.

You can easily store leftover desserts in an airtight container in the refrigerator or even at room temperature if the weather outside is cool enough. While serving, you have the option to present them chilled or at room temperature.
