Pineapple Mousse
You must have indulged in a cup of chocolate or coffee mousse once in your lifetime. But do you know where this widely available airy desert originates from? – 18th Century France. The term “mousse”, in fact, is derived from the French word meaning "foam." Originally made up of whipped cream and sugar, mousse was served as a secondary course, but noted French chef Marie-Antoine Carême revived it in the 19th century with the addition of the decadent chocolate and the eggs, which makes mousse as airy as it is. His recipes became the standard for preparing the dessert. Since then, mousse has evolved to include flavors such as fruit, nuts, and liqueurs. Today, mousse is one of the most widely loved desserts worldwide due to its soft and creamy texture with robust flavors.
Ingredients:
- 230 gm pineapple
- 180 gm cream
- 155 gm sugar
- 14 ml vanilla extract
- 4 egg whites
Method:
- You have to start by making a puree of fresh pineapple chunks in a blender or food processor until smooth.
- Them, whip heavy cream in a large bowl until stiff peaks form. Whisk the egg whites separately until it becomes white and foamy, and does not slide off the bowl when it’s overturned.
- After that, you have to add sugar and vanilla extract to the whipped egg whites, as you continue stirring the concoction.
- Now, gently fold the whipped cream into the egg whites so that the mixtures do not deflate. Once the mix is ready, now pour in the pineapple puree into the cream and egg whites mix.
- Cut a few bite-sized pieces of pineapple and incorporate into the mix for a slight textural mouthfeel.
- Now, you just have to pour this mixture into individual serving cups that have already been refrigerated for an hour or so. This ensures that the mousse does not start separating right away.
- Before serving, you must refrigerate for at least 3 hours so that the delectable flavors come out well.
Pineapple and Mango Crisp
This easy dessert that can be enjoyed during any season of the year, and would feel just as fresh every time.
Ingredients:
- 210 gm pineapple
- 215 gm mango
- 110 gm granulated sugar
- 54 gm flour
- 100 gm oats
- 55 gm sugar
- 50 gm pecans
- 4 tsp cinnamon
Method:
- Start with preheating the oven to 200°C.
- In a big bowl, mix pineapple chunks, mango chunks, granulated sugar, and flour.
- Then, pour this mixture into a baking dish.
- In another bowl, mix rolled oats, brown sugar, chopped pecans, and cinnamon.
- Proceed to coat the fruit mixture with the oat mixture.
- You have to allow it to bake for 35-40 minutes.
- In order to bring out its flavors best, you can serve it warm with ice cream.
Pineapple and Coconut Creme Brûlée
Ingredients:
- 220 gm condensed milk
- 90 gm cream
- 65 gm coconut
- 14 ml pineapple juice
- 75 gm sugar
Method:
- You first have to preheat the oven to 150°C.
- In a medium bowl, mix sweetened condensed milk, heavy cream, shredded coconut, and pineapple juice.
- Pour this mixture into small baking cups.
- You have to allow them to bake for 25-30 minutes.
- Then comes the fun part where you have to sprinkle the cups with granulated sugar.
- In this step, you need to be extremely careful while caramelizing the granulated sugar with a kitchen torch.
- You need to wait for at least 2 hours till they chill in the refrigerator, and then once they are out, just dig in.
