Ingredients (Makes 8 donuts)

For the donuts:

  • 250 gm all-purpose flour
  • 50 gm sugar
  • 5 gm baking powder
  • 5 gm baking soda
  • 5 gm salt
  • 150 ml milk
  • 50 ml buttermilk
  • 1 large egg
  • 5 ml vanilla extract
  • 50 gm melted butter

For the glaze:

  • 200 gm powdered sugar
  • 50 ml milk
  • Food coloring (dark blue, purple, and white)
  • Edible glitter

Procedure

  1. Make the donuts:
  • Preheat your oven to 175°C. Grease a donut pan like it's going out of style.
  • In one bowl, whisk together your flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix milk, buttermilk, egg, vanilla, and melted butter.

Procedure

  1. Prepare the ice cream centers:
  • Scoop the strawberry ice cream into 12 small balls (about 1 tbsp each). Pop them onto a tray lined with parchment paper and freeze for at least two hours or until rock solid. No one likes a melting mochi.

2. Mochi dough time:

  • In a microwave-safe bowl, mix glutinous rice flour, sugar, water, and pink food coloring until smooth.
  • Cover the bowl loosely with plastic wrap, then microwave for one minute. Stir.
  • Microwave again for another minute. Stir once more.
  • Microwave a final time for 30 seconds until it’s thick, sticky, and impossible to stir. Congratulations, you’ve made mochi dough!

3. Assembly:
