Flavor-infused Boba Pearls with Jasmine Tea and Lychee Jelly:
Ingredients:
- 100 gm tapioca starch
- 30 gm sugar
- 80 ml water (split into 40 ml each for two flavors)
- 10 gm matcha powder
- 10 ml beetroot juice (for natural color)
- 10 ml lemon juice
Ingredients for Jasmine Tea with Lychee Jelly:
- 500 ml water
- 2 jasmine tea bags (or 4 gm loose jasmine tea leaves)
- 100 ml lychee juice
- 200 gm fresh lychee (pitted and chopped)
- 50 ml condensed milk
- Ice cubes as needed
Method:
To prepare the flavor-infused boba pearls:
- First and foremost, take two separate bowls, and prepare your flavor bases. For this, you need to mix the matcha powder with hot water in one bowl, and beetroot juice, water, and lemon juice in another. This creates two distinct flavor and color bases for the boba pearls.
- Take a small saucepan, and dissolve the sugar in the matcha water mixture over medium heat until it just begins to simmer.
- Now, gradually add tapioca starch, stirring constantly until a thick paste forms.
- After this, transfer the mixture to a bowl and knead it until it forms a smooth, pliable dough.
- For the beetroot dough, take another saucepan, and dissolve the sugar in the beetroot-lemon mixture over medium heat until it begins to simmer.
- Slowly add tapioca starch, stirring constantly to form a thick paste.
- Now, transfer it to another mixing bowl and knead until the dough is smooth.
- Roll each dough into small, even-sized balls to form the boba pearls. Keep them separate to maintain their distinct colors and flavors.
- After this, bring a pot of water to a boil. Add the matcha boba pearls first, cooking them for 15-20 minutes until they float to the surface and have a chewy texture. Remove and rinse them under cold water.
- Repeat this process with the beetroot-flavored boba pearls in the same pot, cooking them until they also float and become chewy. Now, rinse them under cold water.
- Toss the cooked pearls in a small amount of sugar syrup to prevent sticking and enhance the flavor.
To prepare the Jasmine Tea with Lychee Jelly:
- Brew the Jasmine Tea by taking a medium saucepan, and bringing the water to a boil. Now, add in jasmine tea bags or loose jasmine tea leaves. Reduce the heat and soak the leaves for around five minutes.
- After this, add the lychee juice. For this, you need to remove the tea bags or strain the loose leaves. Add the lychee juice to the brewed jasmine tea and stir it well. Allow the tea to cool, then chill in the refrigerator for at least 30 minutes.
- Prepare the lychee jelly. In order to do that, take a blender, and puree fresh, pitted lychees with a small amount of the brewed tea until you have a smooth mixture.
- Now chill the jelly. For this, pour the lychee puree into a shallow dish and refrigerate until set. Once set, cut the jelly into small cubes.
Assemble the Drink:
- Layer the ingredients in a tall glass, and add a mix of matcha and beetroot-flavored boba pearls at the bottom.
- Add the ice and lychee jelly. For this, fill the glass with ice cubes and add a spoonful of lychee jelly cubes.
- Now, gently pour the chilled jasmine tea over the ice, filling the glass.
- After this, drizzle the condensed milk over the top for a creamy finish.
Stir the beverage well with a wide straw to mix the flavors and enjoy your homemade flavor-infused boba tea.
