Gur Ka Halwa (Jaggery Pudding)

Our favorite dessert uses jaggery, a healthier alternative to sugar, and brings the warmth of Indian spices like cardamom into a cozy dish perfect for cool evenings.

Ingredients:

  • 150 gm semolina (sooji)
  • 120 gm jaggery (gur)
  • 60 gm of ghee
  • 500 ml water
  • 50 gm chopped nuts (almonds, cashews, pistachios)
  • 5 gm cardamom powder

Method:

  1. In a pan, melt ghee and roast semolina on low heat until golden and aromatic. Be patient and stir constantly to avoid overheating. 
  2. Dissolve jaggery in water, ensuring no lumps remain. Use lukewarm water to ensure quicker dissolving.
  3. Slowly add the jaggery water to the roasted semolina, stirring continuously to avoid lumps.
  4. Add cardamom powder and let it simmer on low heat until the mixture thickens. It will have a tendency to stick so keep stirring.
  5. Garnish with chopped nuts and serve warm.

Apple Kheer (Apple Rice Pudding)

Combining the sweetness of apples with the richness of rice kheer, this dessert is an ideal autumn treat with seasonal fruits and the creamy texture of traditional Indian pudding.

Ingredients:

  • 500 ml milk
  • 100 gm basmati rice (soaked)
  • 100 gm grated apples
  • 80 gm sugar
  • 30 gm ghee
  • 50 gm chopped nuts (almonds, pistachios)
  • 5 gm cinnamon powder

Method:

  1. Boil milk in a heavy-bottomed pan and reduce to two-thirds.
  2. Then add soaked rice. Let it cook until the rice softens, stirring occasionally. Make sure it does not stick.
  3. In a separate pan, sauté grated apples in ghee for a few minutes. Sauté it so the moisture from the apples reduces.
  4. Once the rice is fully cooked, add sugar, sautéed apples, and cinnamon powder. Please note, once you add sugar the rice won’t soften any longer. Therefore, add the sugar only once the rice is cooked fully.
  5. You can simmer for a few more minutes until it reaches a creamy consistency.
  6. Garnish with chopped nuts and serve chilled or warm.

  • 300 gm all-purpose flour
  • 200 gm pumpkin puree
  • 150 gm sugar
  • 120 ml vegetable oil
  • 100 gm brown sugar
  • 3 eggs
  • 10 gm baking powder
  • 5 gm baking soda
  • 10 gm cinnamon powder
  • 5 gm nutmeg powder
  • 5 gm ginger powder
  • 5 ml vanilla extract
  • 150 gm cream cheese (for frosting)
  • 100 gm butter (for frosting)
  • 200 gm powdered sugar (for frosting)

Method:

  1. Preheat the oven to 180°C and grease a cake tin with the vegetable oil.
  2. Mix the flour, baking powder, baking soda, cinnamon, nutmeg, and ginger. This is to be considered as your ‘dry ingredients’.
  3. In a separate bowl, whisk together pumpkin puree, sugar, brown sugar, oil, and eggs until smooth. Consider this to be your ‘wet ingredients’.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour the batter into the cake tin and bake at 180°C for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  6. For the frosting, beat cream cheese, butter, and vanilla until smooth, then gradually add powdered sugar.
  7. Once the cake cools, spread the cream cheese frosting on top, slice, and enjoy this spiced autumn delight.
