Coconut Ladoo (Coconut Fudge Balls):

This is a traditional coconut-based Indian dessert consumed as prasad (religious offering to the Gods) during multiple Indian holy festivals throughout the year.

Ingredients:

  • 251 gm coconut (preferably grated)
  • 202 gm condensed milk
  • 53 gm ghee
  • 2 tsp cardamom
  • 1 tsp saffron

Method:

  1. First, you need to place a large saucepan on heat, and then, you have to add the ghee and start melting it.
  2. After about two minutes, you need to add coconut and mix it in.
  3. You have to continue the cooking process and stir it constantly, for around three to five minutes. During this time, the coconut would be gently toasted.
  4. At this step, you can carefully pour the condensed milk while continuing to stir it to avoid any lumps.
  5. While stirring frequently, for another five to seven minutes, you have to check for the mixture thickening and taking on a light golden brown hue.
  6. Once adequately cooked, you can take it off the heat and stir in the saffron and cardamom powder.
  7. Then, you have to wait for it to cool down.
  8. After the mixture is cool enough to handle, you should ideally make tiny balls with a diameter of about two inches.
  9. You can arrange the ladoos on a baking sheet that has been lined with ghee, and put them into the refrigerator.
  10. Before serving, you must garnish with some chopped almonds.

Chocolate Burfi:

Ingredients:

  • 205 gm Cadbury Bourneville Dark Chocolate
  • 195 gm condensed milk
  • 52 gm ghee
  • 1 tsp vanilla extract
  • ⅕ tsp cardamom powder

Method:

  1. Using the double boiler method or a microwave, you have to melt the Cadbury Bourneville Dark Chocolate while stirring it in intervals.
  2. Once done, you need to add the ghee, vanilla extract, and condensed milk in a different saucepan.
  3. After cooking for around eight to ten minutes while stirring continuously, you can add in the melted chocolate.
  4. You then need to stir the mixture well until all of the chocolate is mixed in.
  5. At this step, you can add a dash of cardamom and gently mix it in.
  6. You have to pour the mixture into a tray lined with parchment paper.
  7. After putting it in the refrigerator for about three hours, you may use a knife to slice it into squares.
  8. Before serving, you can drizzle some honey or serve it with a side of vanilla ice cream.

This dessert can be stored in the refrigerator for up to three days.

Besan Burfi:

Ingredients:

  • 252 gm gram flour
  • 202 gm ghee
  • 205 gm granulated sugar
  • 1 tsp cardamom powder
  • ⅓ tsp saffron strands

Method:

  1. You first have to heat the ghee in a large saucepan on low heat.
  2. Then, you need to take care to slowly add the gram flour, stirring constantly to prevent any lumps.
  3. After cooking the mixture of gram flour and ghee for around eight to ten minutes, you can reduce the flame and move on to the next step.
  4. Here, you have to add in the sugar, cardamom powder, and saffron strands.
  5. Once you have combined the entire mixture well, please continue cooking it for another five minutes.
  6. Once adequately cooked, you can remove it from heat and let it cool down a little.
  7. Next, you need to transfer this mixture to a tray brushed with ghee and press it down into a rectangular shape.
  8. You have to refrigerate it for at least 45 minutes for it to set properly.
  9. Before serving, you can slice it into diamond-shaped burfis and serve it with evening snacks and tea.
