Created by Amy Sherman-Palladino, this is a heartfelt and hilarious American drama series that shows the inseparable bond between a 32-year single mother Lorelai and her teenage daughter Rory.

Coffee Cake Cookies

Coffee cake cookies became very popular after it was featured in this series. Made with cinnamon dough base and topped with streusel and icing, this delight is very soft in texture and tastes very similar to coffee cake. So, get ready with your baking tools and make coffee cake cookies.

Ingredients

Cinnamon dough

  • 1/2 cup butter, softened
  • 1/2 cup vegetable oil
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 1/2 cups flour

Streusel

  • 1/4 cup butter softened
  • 1/4 cup brown sugar
  • 1/3 - 1/2 cup flour
  • 1/2 tsp cinnamon
  • pinch of salt
  • Icing
  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • splash of vanilla

Method

  • Preheat the oven to 350 F. To make the dough, combine the butter, oil and brown sugar. Mix for a couple minutes until it is smooth. The mixture should be lighter in color and fluffy.
  • Add the egg and vanilla and mix again. Add the remaining ingredients and mix until just combined.
  • To make the streusel, combine all the ingredients in a bowl and mix with a spoon or your hand. Start with 1/3 cup of flour. Using a cookie scoop, scoop a ball of dough onto a lined baking sheet.
  • Using the back of your fingers, make an indent on the top of the dough. Sprinkle a couple tbsp of the streusel on the top of the cookie, into the indent.
  • Bake the cookies in the oven for 10-12 minutes. While they are baking, make the icing. Combine the powdered sugar, milk, and vanilla in a mixing bowl and whisk until it's smooth. Once the cookies have cooled slightly, drizzle on lots of icing. Serve.

Dessert Sushi

Dessert Sushi is a fun and exciting twist on the popular Japanese delicacy. This sweet treat is perfect for Thanksgiving, birthday parties and house parties. It was featured in Episode 7, and they had hot tamales on an Oreo-like cookie, a Tootsie-roll marshmallow Twizzlers roll.

Ingredients

  • 8 rice crispy treats
  • 1 bag of Swedish fish
  • 2 fruit roll ups
  • rainbow chocolate candies
  • Additional candy

Method

Rice crispy

  • If you are making rice treats, make them fairly thin.
  • For readymade rice crispy treats, use a rolling pin and thin them out.

Dessert sushi

  • Once you have thinned the rice crispy treat, fill with your favorite gummy candies. Roll the rice crispy treat around the gummies to form a roll.
  • Cut a piece of fruit roll-up about 1/4 inch thick and wrap around the outside of the roll. Add colorful chocolate candies to the top.

Candy sashimi

  • Simply add a Swedish fish or desired candy on top of the rice crispy treat. Wrap 1/4-inch-thick fruit roll up around outside of rice crispy sashimi.

Strawberry Pop Tarts

Made with fresh strawberry jam, flaky pie crust and sweet vanilla glaze, these sweet pop tarts are perfect for any kind of celebration. It goes well for your breakfast as well as brunch. For icing you can use rainbow sanding sugar or sprinkles.

Ingredients

Dough:

  • 2 cups all-purpose flour
  • 3/4 tsp salt
  • 1 tsp granulated sugar
  • 3/4 cup unsalted butter cold
  • 4-6 tbsp ice water

Jam:

  • 1 lb. strawberries
  • 1 tbsp lemon juice
  • 1/2 cup granulated sugar

Icing:

  • 1 cup powdered sugar, sifted
  • 1 1/2 - 2 tbsp water
  • 1/4 tsp vanilla
  • Rainbow sanding sugar or sprinkles

Method

  • To prepare jam, hull strawberries and slice them into halves. Add strawberries to a food processor and blend until smooth. Pour through a mesh strainer, set over a bowl. Add strawberry puree, lemon juice and sugar to a saucepan, set over medium-high heat.
  • Stir to combine and dissolve sugar. Bring mixture to a boil, skimming the foam off the top. Continue cooking until the mixture has thickened. Stir gently until the jam reaches the desired thickness. Transfer jam to a small jar. Allow it to cool to room temperature.
  • In a mixing bowl, combine flour, salt and sugar. Cut 1/2-cup butter into small cubes. Add the butter cubes to the flour mixture. Use a pastry cutter, forks or your fingers to work the butter and flour mixture together.
  • Continue this process until only pea size pieces of butter remain. Cut the remaining 1/4-cup butter into larger 1/4-inch slices. Work the butter slices into the dough with your fingers, pressing and squeezing. Add enough water to hold the dough together.
  • Transfer dough to a sheet of parchment paper, folding the dough over on itself until it is fully combined. Shape into two disks. Wrap well with plastic and refrigerate for at least one hour.
  • Preheat the oven to 350°F. Prepare one baking sheet with parchment paper or a silicone baking mat. Roll out one portion of the pie crust, very thin. Cut into six equal 3.5 x 5-inch rectangles. Place evenly spaced on the prepared baking sheet. Transfer to the refrigerator. Repeat with remaining pie dough.
  • Lightly brush the edges around the first six chilled pie rectangles with water. Add 1 tbsp of jam per rectangle, leaving a border. Top off with another rectangle, using a fork to crimp and seal edges closed.
  • Bake for 30-35 minutes or until lightly golden and set. Cool completely on a wire rack. In a mixing bowl, combine sifted powdered sugar with water and vanilla. Decorate cooled pop-tarts with vanilla icing and rainbow sanding sugar or sprinkles.

Rory's Book Club Blueberry Muffins

Rory Gilmore's attachment for books and her penchant for a good muffin come together in this delightful treat. They are a burst of juicy blueberries and have a hint of lemon zest for that extra zing. These muffins are the perfect companion for your anytime sweet cravings.

Ingredients

  • 110 g butter
  • 80 g brown sugar
  • 2 eggs
  • 110 g self-raising flour
  • 1 tbsp baking powder
  • A handful of fresh blueberries

Method

  • Combine butter and sugar together by whisking. Next add in the eggs one at a time and now use a hand whisk and slowly combine everything.
  • Combine well for at least 3-4 minutes then add the flour and blueberries. Mix well until completely combined.
  • Crank up the oven at this point to 200 C and then spoon the mix into 6 paper muffin cases then set them into a bun tray.
  • Bake for about 20 minutes or until the muffins are golden brown. Let it cool and enjoy.

Mississippi Mud Pie

This delightful, sweet treat from Gilmore Girls is bubbly, quirky and rich in taste. Mud pie is prepared with goat cheese, honey, coffee, Oreo cookies and chocolate chips. It is also decorated with chocolate ganache made from semi sweet chocolate and heavy cream.

Ingredients

Cheesecake

  • 11-ounce log mild goat cheese, room temperature
  • ¼ cup white granulated sugar
  • ½ cup full-fat sour cream, room temperature
  • 2 tbsp honey
  • ¼ tsp vanilla extract
  • Pinch of salt
  • 3 large eggs
  • ¼ cup coffee
  • 1 full size package Oreo cookies
  • ½ cup chocolate chips
  • 6 tbsp unsalted butter, melted

Chocolate Ganache

  • 1 cup semisweet chocolate chips
  • ½ cup heavy cream
  • 1 tsp instant coffee granules

Method

  • Preheat the oven to 350 degrees F. Put aside 10 Oreos. Remove the cookies from the rest of the Oreos and crush them in a food processor. Mix the cookie crumbs with the butter in your pie pan and smush the buttered cookie crumb mixture against the pan until it resembles a crust.
  • While the crust bakes, combine goat cheese and sugar in a stand-up mixer for two minutes. Add sour cream, honey, vanilla, and salt and mix until fully combined—about two minutes.
  • Add eggs one at a time as you mix. Once eggs are fully combined, add coffee and fold in chocolate chips. Pour the mixture into the baked crust. Bake for 50 minutes, or until the center only moves slightly when lightly shaken. Refrigerate for about 1 and a half hours.
  • Then prepare the ganache. Cook the chocolate, heavy cream, and coffee granules in the top of a double boiler, stirring occasionally. Pour it over the top of the cheesecake. Break the remaining Oreos in half and place in the ganache. Refrigerate for 3 hours. Enjoy.
