- 4 egg whites
- 200 gm caster sugar
- 1 tsp vanilla extract
- 300 ml heavy cream
- 2 tbsp powdered sugar
- 200 gm mixed berries (strawberries, blueberries, raspberries)
- 1 tbsp fresh mint leaves, chopped (optional)
Method:
- First and foremost, you need to set the oven to 120°C and line a baking sheet with parchment paper.
- Then, you should beat the egg whites in a clean bowl until soft peaks form. Gradually add caster sugar, 1 tbsp at a time, beating continuously until stiff, glossy peaks form. After this, you can add the vanilla extract and mix the ingredients gently.
- Spoon the meringue onto the prepared baking sheet in small circles, creating a small well in the center of each. Now, bake them for 60-70 minutes or until they are crisp. Turn off the oven and let the meringues cool inside.
- Now, whip the heavy cream with powdered sugar until soft peaks form.
- Top each meringue with a dollop of whipped cream and scatter the mixed berries over the top. Garnish with chopped fresh mint leaves if you want to.
- You can serve the dish immediately for a light and elegant dessert.
Lemon Lavender Tarts:
Ingredients:
- 200 gm all-purpose flour
- 100 gm unsalted butter, chilled and cubed
- 50 gm powdered sugar
- 1 egg yolk
- 2 tbsp cold water
- 200 gm lemon curd
- 1 tsp dried lavender, finely chopped
Method:
- Firstly, take a bowl and mix the all-purpose flour, chilled unsalted butter, and powdered sugar until the mixture resembles the consistency and texture of breadcrumbs. Then, add the egg yolk and cold water, mixing them until a dough forms. Wrap it in a plastic wrap and chill for 30 minutes.
- Roll out the dough and cut it into small circles to fit the mini tart pans. Line the pans with the dough, prick the base with a fork, and bake at 180°C for 10-15 minutes or until golden. Then, you can allow them to cool down completely.
- Then, mix the lemon curd with finely chopped dried lavender.
- After this, spoon the lemon-lavender mixture into each tart shell.
- Finally, you can garnish it with some additional lavender or a thin slice of lemon and serve it chilled.
Chocolate Hazelnut Mousse Cups:
Ingredients:
- 200 gm Cadbury Bourneville Dark Chocolate, chopped
- 100 gm hazelnut spread
- 300 ml heavy cream
- 2 tbsp powdered sugar
- 50 gm hazelnuts, chopped and toasted
Method:
- As the first step, you need to melt the Cadbury Bourneville Dark Chocolate in a microwave or a double boiler until it is liquidy and smooth.
- Then, take a bowl and whisk the heavy cream with powdered sugar together until soft peaks form. Follow it up by gently folding in the melted chocolate and hazelnut spread until they are well combined.
- Now, spoon the mousse into small serving cups and chill for at least two hours or until it is completely set.
- Finally, sprinkle some chopped toasted hazelnuts over each cup and serve chilled.
Strawberry Basil Panna Cotta:
Ingredients:
- 400 ml heavy cream
- 100 ml milk
- 100 gm granulated sugar
- 1 tsp vanilla extract
- 2 tsp gelatin
- 2 tbsp water
- 200 gm strawberries, diced
- 2 tbsp fresh basil, finely chopped
Method:
- First and foremost, take a saucepan and heat some heavy cream, milk, granulated sugar, and vanilla extract over medium heat until the sugar dissolves completely. But be careful not to boil it.
- Soften some gelatin in water and then add to the hot cream mixture. Please stir it until it is completely dissolved.
- Now, pour the mixture into small serving glasses and refrigerate for at least four hours or until the dessert is set.
- After this, garnish with diced strawberries with finely chopped fresh basil.
- Finally, spoon the strawberry-basil mixture over the panna cotta and serve it chilled.
