Follow These Quick Dessert Recipes For Wholesome-ish Granola Desserts That are Perfect for Cheat Days

Health freaks would know how integral granola is for breakfast - you can add it on top of smoothie bowls, have it with some milk or yoghurt, and even carry it with you on long walks and hikes to fuel up. This crunchy delight can also be turned into delicious and slightly healthy desserts for those cheat days when you simply cannot do without a sweet fix. Here are some recipes: 

Peanut Butter Granola Blondies

Ingredients:

  • 250 gm peanut butter
  • 150 gm packed brown sugar
  • 2 tsp vanilla extract
  • ½ tsp baking soda
  • 150 gm granola
  • ¼ tsp sea salt
  • 60 ml melted butter
  • 90 gm dark chocolate chips
  • 2 eggs 

Instructions:

  1. Preheat the oven to 160°C and line a baking tin of your preferred size with parchment paper.
  2. Combine peanut butter, sugar, eggs, and melted butter along with vanilla extract and mix until well-combined.
  3. Fold in the flour, baking soda, salt, and granola into the liquid ingredients.
  4. Lastly, add the chocolate chips.
  5. Pour the brownie batter in the prepared baking tin. Top with some more granola if you want.
  6. Bake for about 30 to 35 minutes.
  7. Let the blondies cool, then slice and serve. 

Granola Coffee Cake

Ingredients:

  • 180 gm flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon powder
  • A pinch of sea salt
  • 250 gm granola
  • 2 ripe and mashed bananas
  • 1 tsp vanilla extract
  • 2 eggs
  • 80 ml coconut oil
  • 80 ml maple syrup
  • 200 ml buttermilk
  • 40 ml freshly brewed coffee 

Frosting:

  • 226 gm softened, unsalted butter
  • 360 gm powdered sugar
  • 30 ml brewed coffee
  • 1 tsp vanilla extract 

Instructions:

  1. Preheat the oven to 180°C and prepare your baking pan by lining it with parchment paper.
  2. Combine all the dry ingredients, including the granola, in a large mixing bowl and set this aside.
  3. Whisk the eggs, vanilla extract, coconut oil, maple syrup, brewed coffee, and buttermilk until everything is cohesive.
  4. Mix the dry ingredients with the wet, ensuring there are no flour pockets or lumps. Try not to overmix the batter.
  5. Then transfer the cake batter into the cake tin.
  6. Bake for about 40 to 45 minutes. Test for doneness by inserting a skewer or toothpick in the cake. If it comes out clean, it’s fully cooked.
  7. As the cake cools, prepare the buttercream frosting by whipping the butter and icing sugar.
  8. Then mix in the fresh coffee and vanilla extract.
  9. Ladle it over the cooler cake. Garnish with a sprinkling with some more granola. 

Granola Apple Crisp

Ingredients:

  • 4 peeled, cored and thinly sliced apples
  • 2 tsp lemon juice
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt 

Granola topping:

  • 240 gm granola
  • 50 gm brown sugar
  • 30 gm flour
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • 60 gm butter 

Instructions:

  1. Preheat the oven to 170°C, then prepare the granola topping. For this, you’ll need to mix granola, brown sugar, flour, cinnamon, nutmeg with melted butter. Combine everything thoroughly.
  2. Toss the apples in lemon juice, then add the spices and salt.
  3. Create a layer of these spiced apples in a baking dish, then top this up with the granola mix. Ensure that the apples are completely covered.
  4. Bake in the oven until the top is crisp and the apples are soft.
  5. Have this with a scoop of ice cream or some vanilla-flavored yoghurt.
