Ingredients:
- 300 ml non-dairy milk
- 2 ripe bananas, mashed
- 1 tbsp maple syrup
- 1 ½ tbsp cornstarch
- ¼ tbsp vanilla extract
Instructions:
- Create a cornstarch slurry with some milk. Mix well and set it aside.
- Add mashed banana, non-dairy milk, vanilla, and maple syrup in a saucepan over medium heat.
- Once this mixture is warm and simmering, mix in the cornstarch slurry.
- Reduce the heat. Keep whisking to avoid lumps and get a smooth pudding.
- Once done, you can transfer into a utensil of choice, cover with plastic wrap to avoid a skin to form on top, and refrigerate.
- You can also give the cold pudding a blend in the food processor for a silkier consistency.
- Serve with some crushed biscuits and sliced bananas.
Vegan Banana Cake
Ingredients:
- 3 overripe bananas
- 200 gm granulated sugar
- 95 gm packed brown sugar
- 250 gm dairy free milk
- 125 gm neutral oil
- 1 tsp vanilla extract
- 375 gm flour
- 1 tsp ground cinnamon
- 3 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 120 gm chopped nuts of choice and chocolate chips
Instructions:
- Preheat the oven to 180°C and line a 9x13 inch cake tin with parchment paper.
- Sift the dry ingredients together in a large bowl and set them aside.
- Add bananas, sugar, oil, salt, and vanilla extract in a food processor and blend.
- Then add the dairy free milk into this and blend again.
- Transfer into a bowl, and fold the flour in batches.
- Finally add the chopped nuts and chocolate chips to the batter. You can use a variety of nuts like almonds, walnuts, and pecans.
- Transfer the batter into the prepared cake tin and bake in the oven for about 35 to 40 minutes.
- Once done, let it cool at room temperature. Then slice and serve.
- You can also create a vegan cream cheese frosting if you want to make the cake decadent. Then decorate it with more chopped nuts.

- 100 gm oat flour
- 50 gm cocoa powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp sea salt
- 2 mashed ripe bananas
- 60 ml maple syrup
- 50 gm brown sugar
- 1 tbsp brewed coffee
- 2 tsp vanilla extract
- 80 gm runny almond butter
Instructions:
- Preheat the oven to 177°C and line an 8-inch square pan with parchment paper. Leave some overhang on the sides.
- Add all of the dry ingredients - oat flour, cocoa powder, baking soda, cinnamon, and sea salt - in a bowl.
- Mash the ripe bananas, either using a fork or in a food processor. To this, add maple syrup, brown sugar, brewed coffee, vanilla extract, and runny almond butter. Whisk well to combine all of these ingredients together to get a smooth consistency.
- Fold the dry ingredients into the wet and mix well.
- Pour the batter into the prepared cake tin and bake the brownies in the oven for about 28 to 30 minutes. Do a toothpick test to check whether the brownies are cooked all the way through.
