You may find rice cakes in your supermarket grocery aisle, sold in the healthy snacks section or you can prepare a rice cake following any basic cake recipe. They’re typically flavourless, round and flat discs made with puffed rice. Plain rice cakes are a neutral item, eaten for their low FODMAP quality because they’re easy to digest and won’t cause any gas or discomfort if you have gastric issues. They’re also sometimes recommended for weight management and to regulate blood sugar levels.
Not all packaged rice cakes are nutritious though. You might even find seasoned ones, but those are not the healthiest as they may have high sodium or sugar content. But most of these are cholesterol free dessert recipes, make sure to check the label of the ingredients on the back.
If you have decided to purchase these puffed rice cakes and don’t know what to do with them, then the simplest way to eat them is with a smear of any nut butter, some fruits and seeds. You can also make a healthy version of bruschetta. But if you want to give these snacks a dessert makeover for a cheat day, then here are some ideas you can refer to:
Peanut Butter Rice Cake
Ingredients:
- 1 rice cake
- 1-2 tbsp peanut butter
- 2 tbsp melted Cadbury Bournville Rich Cocoa 70% Dark Chocolate
- ½ tsp coconut oil
- A pinch of flaky sea salt
Instructions:
- Spread the peanut butter evenly on top of the rice cake. You can refrigerate it to let the peanut butter solidify.
- Melt a few squares of Cadbury Bournville Rich Cocoa 70% Dark Chocolate with coconut oil in a microwave proof bowl. Microwave for about 30 seconds and stir until well-combined.
- Generously drizzle the chocolate over the peanut butter smeared rice cake.
- Garnish with some flaky sea salt and enjoy.
Banana Split Rice Cake
Ingredients:
- 2 rice cakes
- 1 banana
- 2 tbsp whipped cream
- 2 tsp sprinkles
- 1 tbsp maple syrup
- 1 tsp Cadbury Cocoa Powder
- 2 maraschino cherries
Instructions:
- All you have to do is assemble the rice cakes in a serving dish then layer the chopped banana, maple syrup mixed with some Cadbury Cocoa Powder, and whipped cream.
- Garnish with two maraschino cherries, and enjoy.
- You can also add some vanilla greek yoghurt or low-fat ice cream to this dessert.
Rice Cakes S’mores
Ingredients:
- 2 rice cakes
2 marshmallow
- 4 squares Cadbury Bournville Rich Cocoa 70% Dark Chocolate
- Peanut butter (optional)
- Strawberries or bananas (optional)
Instructions:
- To assemble the rice cake s'mores place the marshmallows on top of one rice cake. That's your base.
- You can optionally spread a thin layer of melted peanut butter on the other rice cake.
- Add four squares of Cadbury Bournville Rich Cocoa 70% Dark Chocolate on top of the base layer.
- Top with the peanut butter-coated rice cake and then toast it on a pan for sometime. Toast both sides of the rice cakes.
Peaches and Cream Rice Cake
Ingredients:
- 1 rice cake
- 1-2 tbsp cream cheese
- 1 peach, sliced
- ½- 1 tbsp honey or store bought caramel sauce
Instructions:
- Spread cream cheese generously onk the rice cake, then top with a drizzle of honey or caramel sauce. Honey is a healthier option than the caramel sauce, but the choice is yours.
- Artfully arrange the peach slices over the cream cheese. Drizzle some more honey or caramel sauce if you desire.
