During this heatwave, eating Greek yogurt is a great way to beat the heat because it’s hydrating, has a cooling effect on the body, and is easy on the stomach because of its probiotic quality.
If you’re bored of having Greek yogurt on its own, there are definitely a lot of desserts that you can make with it. Before we get on to the recipes, here is how you can make Greek yogurt at home:
Recipe for homemade Greek yogurt
Ingredients:
- 1 liter full fat milk
- 2 tbsp Greek yogurt culture
Instructions:
- Bring all of the milk to a boil in a large pot. Once it begins to boil, reduce the flame from high to medium.
- Keep the pot on the stove for 30 minutes or so to evaporate some of the liquid content of the milk.
- Pour the milk from some height into your yogurt setting vessel while being careful not to splash yourself with the hot liquid.
- Leave the vessel outside so that the milk comes down to room temperature.
- Add two tablespoons of the culture into the pot into the room temperature milk.
- Cover the vessel and let the yogurt ferment for 6 to 8 hours in a warm spot.
- Once the yogurt has set, refrigerate for 2-3 hours.
- You can strain the yogurt in a muslim cloth for a couple of hours to remove extract liquid.
- Now you’re ready to use the Greek yogurt for the below mentioned dessert recipes.
Greek Yogurt Chocolate Mousse
Ingredients:
- 245 g plain Greek yogurt
- 22 g semi-sweet chocolate chips
- 2 tbsp cocoa powder
- 75 g defrosted raspberries (you can also use fresh if available)
- 200 g cold whipped cream
- Sweetener of choice
Instructions:
- Bring the Greek yogurt to room temperature.
- Add the chocolate chips in a heatproof bowl and microwave for 30 seconds so they’re melted.
- Stir the melted chocolate into the Greek yogurt until blended well and smooth.
- Then sift the cocoa powder into this mixture too and mix.
- As for the raspberries, squeeze any excess liquid from them and add them to the chocolate yogurt too.
- You can whip the cold cream with a sweetener of your choice:
- Then fold this into the chocolate Greek yogurt and transfer into serving cups.
- You can decorate each serving cup with fresh raspberries if you like.
Peanut Butter Yogurt Bites
Ingredients:
- 122 g Greek yogurt
- 32 g peanut butter powder
- 16 g peanut butter
- 1/2 tbsp maple syrup
- 85 g dark chocolate chips
- 1 tsp coconut oil
Instructions:
- Mix the peanut butter powder with either or chunky peanut butter together.
- You can melt the peanut butter in the microwave, so it is easier to mix.
- Then add maple syrup. You can adjust the sweetness depending on your taste.
- Finally, add the dark chocolate chips to this mixture, followed by coconut oil.
- Spread parchment paper on a baking tray or use a silicone sheet, then use a tablespoon to place peanut butter balls on it.
- Make sure you use chilled green yogurt for this recipe. Dip each ball generously in the Greek yogurt, then place it back on the baking tray.
- Put the yogurt dipped peanut butter balls in the freezer for an hour or overnight.
- You can also flavor the yogurt with Cadbury cocoa powder and some sweetener, or add some melted chocolate into it.
