Healthy Birthday Treat Ideas for Kids: Chocolate Fudge Cake, Cornflake Cakes, and Fruit Kebabs

You might be hesitant to let go of healthy habits, and probably don’t allow them to indulge too much junk food or sugar. At the same time, you don’t want to be labeled as the overprotective parent who denies their kid the joy of the usual birthday treats. The good news is that you can strike a balance between nutrition and indulgence on your kid’s special day. Healthy Chocolate Fudge Cake Recipe

Ingredients:

For the cake:

  • 250 g whole wheat flour
  • 400 g date sugar
  • 125 g cocoa powder
  • 85 g unsweetened nut butter
  • 825 ml non dairy milk
  • 1 tsp salt
  • 2 tsp baking soda

For the icing:

  • 300 g soaked cashews
  • 150 g date sugar
  • 30 g cocoa powder
  • 425 ml non dairy milk
  • ¼ tsp salt

Instructions:

  • Preheat the oven to 180 C and grease a 9-inch cake tin with some oil. You can also line the bottom and sides with parchment paper.
  • Sift all the dry ingredients into a large bowl and whisk them together.
  • Then add all the wet ingredients in another bowl and mix well.
  • Incorporate the dry ingredients into the wet using a spatula or a whisk. You can also do this step in a food processor.
  • Transfer the batter into the prepared cake tin, and even the top using a spatula.
  • Bake in the preheated oven for 45 minutes.
  • For the frosting, add the soaked cashews in a food processor and blend until you get a smooth paste.
  • Then add the date sugar, cocoa powder, salt, and non dairy milk.
  • Whiz these ingredients together until you get a thick frosting.
  • Once the cake is cool to touch, you can slice it in the middle to create two layers.
  • Generously spread the frosting in the middle, sandwich with the top layer, and add the remaining frosting on top.
  • Decorate with colorful sprinkles or edible glitter to turn this cake into a special birthday cake.

Cornflake Cakes

Ingredients:

  • 200 g chopped milk or dark chocolate
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 75 g cornflakes 

Instructions:

  • Place 12 cupcake liners in a baking tray.
  • Chop the chocolate into shards or small pieces and then place in a heatproof bowl. Microwave the bowl in 30 second intervals and mix until the chocolate melts.
  • When the chocolate has melted, add coconut oil, maple syrup, and vanilla extract to this. Mix well.
  • Stir in the cornflakes. Mix to ensure that all cornflakes are covered in chocolate.
  • You can also do this activity with children and increase the quantities of all the ingredients.
  • Spoon the cornflake chocolate mixture into the cupcake liners and place the tray in the fridge for 30 minutes or longer.
  • When done, serve these snacks to the kids.

Fruit Kebabs

Ingredients:

  • Hulled strawberries
  • Peeled orange, segmented and cut into half
  • Pineapple cut into 1-inch chunks
  • Banana cut into 1-inch slices
  • Kiwi cut into 1-inch chunks
  • Semi-sweet chocolate, chopped
  • Skewers, number depending on how many you’re making 

Ingredients:

  • Arrange the fruit on the wooden skewers in a rainbow order and place them on a baking sheet or large plate.
  • Take the chopped chocolate, add it to a heatproof bowl, and microwave it until melted.
  • Generously drizzle the fruit skewers with the melted chocolate and refrigerate.

You can also go all out and dip the skewers entirely in melted chocolate. Chill in the fridge so that the chocolate hardens.
