The relentless rains are a bonafide reason to stay curled up at home and indulge in good desserts to eat. But whether you enjoy stepping out or staying indoors, delicious snacks for a rainy day have never hurt anyone. With these versatile recipes, you can make an entire spread of decadent treats besides your hot cocoa desserts for those cold and gloomy days.

Warm Chocolate Lava Cake

Ingredients:

  • 63 gm Cadbury Silk chocolate
  • 102 gm sugar
  • 64 gm flour
  • A pinch of salt
  • 2 gm baking powder
  • 122 ml cream
  • 3 eggs
  • 6 gm vanilla extract

Method:

  1. For this recipe, you have to first heat the oven to 220°C.
  2. After that, you need to combine sugar, flour, Cadbury Silk chocolate, salt, and baking powder together.
  3. Next, you need to take a separate bowl and in it, mix eggs, cream and vanilla and whisk everything together with a hand whisk.
  4. Then, you have to gently mix together the wet ingredients with the dry ones.
  5. For the next step, you have to pour this delicious batter in small oven safe cups, and let them bake for 15 to 17 minutes.
  6. While serving, you can top it with some vanilla ice cream.

To give an interesting twist to this classic recipe, you can also use honey as a topping. While making a batter, you can add in some nuts like chopped walnuts or unsalted chopped peanuts to accentuate the flavors even more.

Cozy Apple Crisp

Ingredients:

  • 803 gm sliced, cored and peeled apples
  • 102 gm sugar
  • 33 gm flour
  • 3 gm cinnamon
  • 2 gm nutmeg
  • A pinch of salt
  • 62 gm oats
  • 63 gm brown sugar
  • 62 gm chopped walnuts

Method:

  1. For the first step, you have to preheat your oven to 190°C.
  2. In a bowl, you have to mix sugar, flour, cinnamon, apples, nutmeg and salt.
  3. After that, you have to take these apples onto a baking dish lined with parchment paper, and top the apples with brown sugar, nuts and oats.
  4. Next, you have to wait for 40 to 45 minutes until the crisps are beautifully baked.
  5. The best way to enjoy this recipe is while it is still warm and has been garnished with some ice cream and maple syrup.

Rainy Day Rice Pudding

Ingredients:

  • 183 gm rice
  • 754 ml milk
  • 63 gm sugar
  • A pinch of salt
  • 3 gm cinnamon
  • 33 gm butter
  • 7 gm vanilla extract
  • Nuts of choice

Method:

  1. This soft, succulent recipe will require you to first mix milk, rice, salt, sugar and cinnamon in a big bowl.
  2. After that, you have to cook this on low heat while you are stirring it in between until everything becomes thick.
  3. Once the desired thickness has been achieved, you have to take the heat off of the bowl and add in vanilla and butter
  4. This easy recipe is so delicious, and gets done within minutes because at this step, you can either dig in warm, or let it cool to room temperature, after which you should prop it into the refrigerator for a couple of hours.
  5. Whether you enjoy it warm or cold, you must garnish it with some nuts or optional fresh fruits to get the best flavor out of the rice pudding.

Brightening Lemon Bars

Ingredients:

  • 192 gm flour
  • 102 gm confectioners’ sugar
  • 64 gm sugar
  • 117 gm butter
  • 3 eggs
  • 6 gm lemon zest
  • 34 ml lemon juice

Method:

  1. You have to first preheat the oven to 180°C.
  2. While the oven is heating, you can mix together sugar, flour and confectioners' sugar.
  3. After this, you have to gently add butter to this mixture and combine everything until you get crumbs.
  4. Next, you have to transfer this mixture into a baking tray and let it bake for 25 minutes.
  5. While it is baking, you can take a big bowl and in it, combine lemon zest, lemon juice, eggs and whisk everything with a hand whisk.
  6. Take the bars out of the oven after 25 minutes and coat everything well with the lemon concoction.
  7. After this, you have to set it in the oven for another 25 to 30 minutes.

8. Once completely baked, you have to wait for another hour until it cools down before cutting it into any shape of your choice.
