Let’s take you down nostalgia lane as Friendship Day rolls in around the corner and you get that weird feeling you get in your nose as you recall the good times. We are talking about friendship bracelets, candies, and happy smiles. This article, hence, goes down the rabbit hole, with a lot of creativity, that needs some time at hand, but trust us, it's worth it. We have a 1 kg sponge cake recipe turned into a letter cake and another slightly smaller so that the decoration makes it well worth baking. So, this is how to celebrate Friendship Day by putting in that extra effort and going that mile for your BFFs, and evoking nostalgia.
1. Friendship Bracelet Cake
Ingredients
Cookie Pizza Base
- 280 g all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 225 gm butter, softened
- 2 eggs, room temperature
- 1 tsp vanilla essence
- 150 gm white sugar
- 150 gm brown sugar
- 340 gm chocolate chips
Decoration
- White chocolate (1 standard bar)
- Cadbury Dairy Milk chocolate (small bar)
- Cadbury gems
- Licorice strings
- Tiny marshmallows
- Oreos (crumbled)
- Frosting
Instructions
- Preheat the oven to 180°C.
- Grease a 12-inch cake pan with butter.
- Take a bowl and mix flour, salt, and baking soda, then set aside.
- Take another bowl and combine butter and sugar until smooth and creamy. Use an electric mixer, stand, or handheld on high. This usually takes 1-2 minutes. Next, add the vanilla essence and mix.
- Crack in the eggs one at a time. Mixing at each turn until fully incorporated.
- Divide the dry ingredients into four parts. Add one part to the wet bowl, mix to incorporate, and repeat until all of the flour is gone.
- Set the mixer aside, add the chocolate chips, and mix with a spatula.
- Transfer the batter to the greased cake pan. Then pop into the preheated oven. Bake for 20-25 minutes. Insert a toothpick at the center to check for doneness.
- Remove from the oven and let it cool while you prep the decorations.
- Use the double boiler method to melt white chocolate and remove it from heat once melted. You will need circles next, take parchment paper, and mark the circles on them.
- Pour the white chocolate into a piping or ziplock pouch and snip off an end. Pipe white chocolate into the non-marked side of the paper filling up the circle. Make enough to house 1 alphabet each for each of your friend's names. Or just go for “Happy Friendship Day” and make enough circles for that.
- Once the chocolate cools down, peel the parchment off them. Press them, smooth side up, into the cake’s surface arranging them as the center of the bracelets. Keep ample space for the string of bracelets on the side.
- Use the Cadbury Gems, small marshmallows, and Oreo pieces to be the beads of your bracelet, and decorate to your liking.
- Now do the Cadbury chocolate next. Melt it, put it into a tiny plastic pouch, snip off the edge, thin enough to pipe alphabets onto the white chocolate.
- Finally, pipe the frosting on the edges of your cake. Have it fresh.
2. Letter Cake
For the cake:
- 175g all-purpose flour
- 150g granulated sugar
- 2 large eggs
- 120ml vegetable oil
- 120ml milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
For the frosting:
- 225g unsalted butter, softened
- 450g powdered sugar
- 30ml heavy cream
- 1 tsp vanilla extract
- Pinch of salt
For decoration:
- Assorted fresh berries
- Sprinkles or edible glitter
Instructions
- Preheat the oven to 180°C. Grease and line a 9x13-inch baking pan with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat eggs, oil, milk, and vanilla extract.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Divide the batter between the two pans and bake for 25-30 minutes or until a toothpick comes out clean. Remove from the oven and allow the cakes to cool completely.
- For the frosting, beat butter until creamy. Gradually add powdered sugar, then mix in cream, vanilla, and salt until smooth.
- Cut cooled cakes into letter shapes spelling "BFF". You may need to stack two layers for each letter.
- Frost the letters generously with the buttercream.
- Decorate with fresh berries, and candy sprinkles in patterns as you like.
- Refrigerate the letters until ready to serve.
