Ingredients:

  • 200g digestive biscuits (or any vegan cookies)
  • 100g melted coconut oil
  • 200g dark chocolate (dairy-free)
  • 400g silken tofu
  • 100g soaked cashews
  • 150ml coconut cream
  • 80g maple syrup or agave nectar
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder
  • Pinch of sea salt

Method:

Begin by preparing the base. Crush the digestive biscuits into fine crumbs and mix with melted coconut oil until the mixture holds together when pressed. Press this mixture firmly into the base of a springform pan, making sure it's evenly spread. Chill the base in the fridge for at least 30 minutes to set. 

Meanwhile, melt the vegan dark chocolate in a heatproof bowl set above simmering water or in the microwave and stir until smooth. Allow it to cool.

In a blender or food processor, puree silken tofu with soaked cashews, coconut cream, maple syrup, vanilla extract, cocoa powder, and sea salt to taste. So smooth and creamy. Melt chocolate and combine with the mixture above. Let everything mix well. Pour this filling over the chilled biscuit base and finish the top with a spatula.

Place the cheesecake in the fridge to set for at least 4-6 hours, or overnight for best results. Once set, remove from the pan and garnish with your favorite toppings, such as chocolate shavings, fruit, or crushed nuts.
