Ice Cream Base: An Ultimate Guide To Master This Frozen Dessert

Ice cream is a beloved dessert that nobody can resist. With its sweet and cooling experience, it has become one of the most popular frozen treats. Enjoyed in a cone, dip or bowl, it has uncountable types and flavors. Chocolate, butterscotch, vanilla, caramel and strawberry are the most demanded flavors of this frozen dessert.

You can pick up any of your favorite ingredients to prepare this treat, but the ice cream base plays a crucial role in giving it the right taste and texture. An ice cream base is basically the liquid mixture of all the ingredients that you are going to churn and transform into cool and creamy ice cream.

The base usually consists of a mixture of ingredients namely milk, cream, sugar, and some thickener like egg yolk or cornstarch. It mostly has a neutral flavor with rich, creamy, smooth and dense texture, if executed correctly. There are many types of ice cream bases such as the custard base, egg free base and no-churn base. Each of them gives your frozen dessert a delicious taste based on which flavor you are adding it to.

Vanilla Ice Cream Base

This is the most common flavor of ice cream relished all over the world. Easy to prepare, vanilla ice cream is very versatile. Though primarily this base is for vanilla flavor ice cream, you can also customize it by adding your favorite ingredients like chocolate chips, cookie crumbles, or fruit during the churning process to enhance the flavor.

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 to 2 teaspoons vanilla extract

Method

  • In a saucepan over medium heat, combine the heavy cream, whole milk, and sugar. Stir the mixture until the sugar dissolves.
  • Once the mixture is heated and well combined, remove it from the heat.
  • Stir in the vanilla extract. You can start with 1 teaspoon and adjust to your taste preference.
  • Allow the mixture to cool to room temperature. If you're in a hurry, you can use an ice bath to speed up the cooling process.
  • Once the vanilla ice cream base has cooled, cover the mixture and refrigerate it for several hours or overnight. This chilling period is crucial for achieving a smooth and creamy texture during the churning process.
  • After thoroughly chilling the base, use an ice cream maker to churn it according to the manufacturer's instructions. This step incorporates air into the mixture while freezing it, turning it into ice cream.
  • Transfer the churned vanilla ice cream to a container, cover it, and freeze it for a few hours or until it reaches the desired firmness.

Flavored Ice Cream Base

Though the base of ice cream can be the same for every flavor, a custard style ice cream base is perfect for the flavored ones. It goes well with chocolate, banana, strawberry, blueberries and so on. Just make sure to chill the ice cream overnight.

Ingredients:

  • 1 cup heavy cream
  • 3 cups half-and-half cream
  • 8 egg yolks
  • 1 cup white sugar
  • ⅛ tsp salt

Method

  • Pour the heavy cream and half-and-half cream into a heavy saucepan, place over medium-low heat, and heat until simmering, stirring occasionally. Then turn the heat down to low.
  • Whisk together the egg yolks, sugar, and salt in a large mixing bowl until thoroughly combined.
  • Slowly pour about 1/2 cup of hot cream mixture into the egg yolk mixture, whisking constantly. Repeat three times more, whisking thoroughly before adding each additional 1/2 cup of hot cream to the egg yolk mixture. Pour the egg yolk mixture back into the saucepan with the remaining hot cream and whisk constantly over medium-low heat until the mixture thickens for about 5 to 8 minutes. But do not let the mixture boil.
  • Pour the ice cream base into a bowl and allow it to cool for about 20 minutes. Then place in the refrigerator and chill overnight. The next day, pour into an ice cream maker, and freeze according to the package directions. Remove the ice cream, pack into a covered container, and freeze for 2 hours or overnight. Enjoy.
