If the Zodiacs Were Desserts, Part 3: What Dessert Is Your Zodiac Sign and Why Should You Bake it Right Away?

Part 3 features three much-talked-about zodiac signs and their best-represented desserts, so we put them in the same room, and if that doesn’t make for a memorable party then we don’t know what does.

A light-footed air sign gets company from an often stoic sign and its flamboyant counterpart, which enjoys attention as much as the air sign. We have Gemini, Capricorn and Leo lined up for this one, and boy! Would they make for a fantastic trio if you put them in the same room! We can almost imagine Gemini and Leo pairing up to annoy the hard-to-bother goat Capricorn!

1. Gemini’s Layered Trifle

This particular air sign enjoys a notorious reputation for being indecisive and light-footed, but are excellent conversationalists and know how to work a crowd. The charming, extroverted twins are often quite a sight at parties and are frequently the center of conversations. So what better dessert than a layered trifle that can contain anything in different combinations?

Ingredients:

  • 500 gm assorted fresh berries
  • 500 gm vanilla pudding or custard
  • 250 ml whipped cream
  • 50 gm crushed biscuits/cookies

To assemble (for 8 servings):

  • 8 clear glasses/bowls (250-300 ml sized)

Instructions:

  • Wash and hull the berries. Cut any larger berries in half.
  • Make the pudding or custard according to package instructions. Allow to chill completely.
  • In a large bowl, whip the cream until soft peaks form.
  • To assemble the trifles, layer the ingredients in each glass starting with 2-3 tbsp of crushed biscuits in the bottom.
  • Top with a layer of chilled pudding or custard.
  • Arrange the berries over the pudding layer.
  • Repeat layers if desired, ending with a dollop of whipped cream.
  • Chill the trifles for at least 2 hours before serving to allow flavors to blend.

2. Leo’s Lemon Meringue Pie

Leos are all about being the center of attention and natural-born leaders, so, the lemon meringue pie is a perfect fit for this big-hearted, flamboyant zodiac sign with a sunny personality. It needs a seasoned hand to make one, but with careful practice, you can make one easily.

Serves 8

Ingredients:

  • 1 store-bought pie crust
  • 3 eggs
  • 150 gm sugar
  • 60 ml lemon juice
  • 30 ml cornflour
  • Zest of 1 lemon
  • 250 ml water

Instructions:

  • Preheat the oven to 180°C. Bake the pie crust for 10 minutes until lightly golden to prepare the crust.
  • In a medium bowl, whisk egg yolks and 100 gm sugar until pale to make the lemon curd base. Whisk in the lemon juice, zest, cornflour, and water, which add flavor and thickness to the curd.
  • Transfer to a saucepan and cook over medium heat, stirring constantly, until thickened to thicken the curd into a filling consistency. Pour into the baked crust.
  • In a clean bowl, whisk egg whites with a pinch of salt until soft peaks form to make the meringue topping. Gradually whisk in the remaining 50 gm sugar until stiff peaks form.
  • Spread meringue over the filling, sealing to the crust edge to top the lemon filling with meringue.
  • Bake for 15 minutes until the meringue is lightly browned to finish baking the meringue. Refrigerate for 4 hours before serving to set the filling.

3. Capricorn’s Dark Chocolate Soufflés

The stoic millionaires and billionaires in fantasy romance novels are most typically Capricorns, who are said to be highly ambitious, bad with expressing their emotions, and have shrewd minds. If a sophisticated rock were a person, this zodiac sign would be it. However, they are quite sensitive(but only need some help with expressing it). So, a dark chocolate souffle is a perfect choice for this highly grounded realist.

Makes 6 soufflés

Ingredients:

  • 100 gm unsalted butter, softened, plus extra for greasing
  • 100 gm Cadbury Bournville Dark Chocolate Bar, chopped
  • 1 tbsp cocoa powder
  • 100 gm caster sugar
  • 4 eggs, separated
  • Pinch of salt
  • Whipped cream to serve

Instructions:

  • Preheat the oven to 180°C, then grease six ramekins with softened butter and dust lightly with Cadbury Cocoa Powder.
  • Melt the chocolate and butter in a heatproof bowl set over a pan of simmering water, stirring occasionally, until smooth. Remove from the heat.
  • In a large bowl, whisk the egg yolks and 50 gm sugar until thick and pale. Whisk in the melted chocolate mixture until combined.
  • In a clean, dry bowl, whisk the egg whites and a pinch of salt until soft peaks form. Gradually whisk in the remaining sugar until stiff peaks form.
  • Stir a spoonful of the egg whites into the chocolate mixture to lighten, then gently fold in the remaining whites until just combined.
