Fun Fro-yo Fruit Bites

This four-ingredient dessert using yogurt is not just easy to grab while on the go but is also easy to create in your kitchen — all you need is 10 minutes! The best part? It only contains 34 calories per serving!

Ingredients

  • 376 gm plain yoghurt
  • 59 ml whole milk
  • 2 tsp honey
  • ½ tsp pure vanilla extract
  • 74 gm blueberries
  • 83 gm strawberries (quartered)
  • 65 gm raspberries 

Instructions

  • In a bowl, whisk yogurt, milk, vanilla and honey until you arrive at a smooth consistency.
  • Fill the individual molds of your ice tray with blueberries, raspberries and strawberries.
  • Spoon the yogurt mixture into the molds, covering them entirely.
  • Freeze for at least 5 hours or until the mixture hardens.
  • Pop the cubes from the mold and enjoy!

Chunky Raspberry Sorbet

What better way to cool off during the summer than with this delicious raspberry sorbet? The best part? You don’t require an ice cream maker to create this dessert at home.

Ingredients

  • 907 gm raspberries
  • 200 gm granulated sugar
  • 177 ml water
  • 1 tbsp lemon juice
  • ¼ tsp salt

Instructions

  • Evenly spread raspberries on a baking sheet lined with parchment paper. Place the sheet in the freezer until the fruit is frozen.
  • Over medium heat, add sugar to water in a saucepan and stir until dissolved. Take the mixture off the heat and let it cool to room temperature.
  • In a blender, combine the frozen raspberries and sugar syrup and blend until smooth. Then add lemon juice and salt and blend again. Give the mixture a taste and see if you’d like it to be more tart.
  • Pour the mixture into a container and set it aside in the freezer until it turns solid.
  • Your sorbet is all set to be enjoyed.

Sweet & Salty Chocolate Bark

What’s not to love about this highly customizable dark chocolate dessert (you can add your favourite dry fruits) that not only satisfies your sweet cravings but is also loaded with energy to get you through the day? And if you’re wondering how many calories it packs — just 206.  

Ingredients

  • 340 gm dark chocolate chips (melted)
  • ½ cup pretzels
  • 40 gm dried cherries
  • 28 gm coconut flakes (unsweetened)
  • 30 gm pistachios (unsalted, roughly chopped)
  • Flaky sea salt

Instructions

  • Pour one-third of the melted dark chocolate onto a baking sheet lined with parchment paper. Make sure to spread it evenly — ⅛-inch thick.
  • Take half of the pistachios, coconut flakes, dried cherries and pretzels and sprinkle it evenly over the melted chocolate.

Ingredients

  • Top it off with the remaining dry ingredients and finish with a generous sprinkle of sea salt.
  • Set the tray aside to harden.
  • Once hardened, break into pieces. You don’t have to be neat about this — the more uneven, the better.

Greek Yogurt Brownies

  • Loaded with just about 91 calories, this Greek yogurt diet dessert is gooey, fudgy and absolutely guilt-free.

 Ingredients

  • 170 gm Cadbury dark chocolate (chopped)
  • 250 gm Greek yogurt
  • 110 gm brown sugar
  • 93 gm all purpose flour
  • 58 gm Cadbury cocoa powder (unsweetened)
  • ½ tsp baking soda
  • 118 ml almond milk (unsweetened)

Instructions

  • Preheat your oven to 180°C.
  • In a bowl, melt the chopped chocolate in the microwave. After letting it sit for 1-2 minutes, add Greek yogurt and sugar. Whisk the mixture until you arrive at a smooth consistency.
  • To this mixture, add all purpose flour, cocoa powder and baking soda, and mix until just combined. Then, add milk and combine well.
  • Pour the mixture into an 8 x 8-inch pan that is lined with parchment paper and bake the brownies for 25-30 minutes. Before pulling the pan out of the oven, poke the brownie with a skewer; it should come out clean.
  • After the brownie is baked, set it aside to cool completely.
  • Cut them up and enjoy!
