1. Flourless Chocolate Cake
This rich, dense cake is more like a slice of pure chocolate heaven.
Ingredients:
- 200 gm dark chocolate
- 150 gm unsalted butter
- 150 gm granulated sugar
- 4 large eggs
- 20 gm cocoa powder
- A pinch of salt
- 10 ml vanilla extract
Procedure:
- Preheat the oven to 180°C. Line a 20 cm round cake tin with parchment paper.
- Break the chocolate into chunks and melt it along with the butter. You can use a double boiler or throw them in a microwave-safe bowl and zap for 20-second intervals. Stir until smooth.
- In a separate bowl, whisk together the sugar and eggs until light and fluffy; about five minutes with an electric mixer.
- The great mix-up: Slowly pour the melted chocolate-butter mixture into the fluffy eggs, making sure to fold it in gently. Add in the cocoa powder, salt, and vanilla extract.
- Pour the batter into your prepped tin and bake for 25 minutes at 180°C. The cake should have a slight wobble in the center, similar to a Choco Lava Cake, but not exactly the same.
- Let it cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely. Dust with a little extra cocoa powder or powdered sugar, and slice like you’ve got something to prove. Serve with whipped cream, or just eat it directly with a fork.
2. Lemon Coconut Macaroons
Macaroons are here to deliver chewy, coconutty goodness with a bright zing of lemon. Simple, sweet, and a little sassy! They are bite sized as Oreo Pop Up Tarts, with tropical flavors.
Ingredients:
- 300 gm shredded coconut (unsweetened, because we’re sweet enough)
- 150 gm sweetened condensed milk
- 50 gm granulated sugar
- 2 large egg whites
- 5 ml vanilla extract
- Zest of 2 large lemons
- Pinch of salt
Procedure:
- Preheat your oven to 170°C and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the shredded coconut and lemon zest. The citrus aroma will make you feel like you’re already in paradise.
- Add the sweetened condensed milk and vanilla extract to the coconut mixture. Stir until it looks sticky enough to hold together. If you can form a snowball with it, you’re on the right track.
- In a separate bowl, whisk the egg whites and salt until stiff peaks form. Think fluffy clouds. Carefully fold these into the coconut mixture, giving it a nice fluffy lift.
- Scoop out tablespoon-sized mounds onto your prepared baking sheet. You can use an ice cream scoop for uniformity or just go freestyle.
- Bake at 170°C for 15-20 minutes, until the tops are golden brown and crispy. Let them cool for a few minutes on the tray before transferring to a wire rack.
3. Almond Butter Cookies
These cookies are naturally gluten free desserts, packed with nutty flavor. These cookies can also be children’s favorite, if served with Oreo Milkshake.
Ingredients:
- 200 gm almond butter (smooth or crunchy)
- 100 gm brown sugar
- 1 large egg
- 5 gm baking soda
- 5 ml vanilla extract
- 100 gm dark chocolate chips (optional)
- Pinch of salt
Procedure:
- Preheat the oven to 180°C and line a baking tray with parchment paper.
- In a large bowl, mix the almond butter, sugar, egg, baking soda, vanilla, and salt. Use a spatula or a wooden spoon, or even a whisk works.
- Toss in those dark chocolate chips and stir until evenly distributed. Because everything’s better with chocolate.
- Using a tablespoon, scoop out the dough and place on your baking tray. These cookies will spread a bit, so leave space between them. Flatten each cookie gently with a fork or the back of a spoon.
- Bake at 180°C for 10-12 minutes until the edges are golden brown but the centers are still soft. Remove from the oven and let them cool on the tray for a few minutes before transferring them to a cooling rack.
- These cookies are the perfect combo of crunchy edges and chewy centers. Pair them with a glass of almond milk if you want to feel extra on-theme.
