Ingredients

For the Brownie Layer:

  • 125g flour
  • 30g cocoa
  • ½ tsp baking powder
  • ¼ tsp salt
  • 100g unsalted butter
  • 150g granulated sugar

  • 2 eggs

Method

  1. Preheat the oven to 180°C (350°F). Line a square tin with parchment paper.
  2. Sift flour, cocoa powder, baking powder and salt. Beat butter, granulated sugar and brown sugar until light and fluffy.
  3. Fold in dry ingredients until combined. Pour into the tin and bake for 20-25 minutes or until a toothpick comes out without moist crumbs. Let cool completely and cut into bite-sized cubes.
  4. Beat cream cheese and powdered sugar until smooth.
  5. Add peppermint extract and fold in whipped cream until fully incorporated.
  6. Melt the dark chocolate.
  7. Whisk chilled cream until soft peaks form. Fold into melted chocolate to make mousse.
  8. In a glass trifle bowl or individual glasses, layer brownie cubes at the bottom.
  9. Add a layer of peppermint cream, then chocolate mousse.
  10. Repeat layers until glasses are full, finishing with a layer of chocolate mousse.
