Ingredient

  • 250g fresh strawberries
  • 100g granola or digestive biscuits
  • 200ml fresh cream or Greek yogurt
  • 2tsp powdered sugar
  • 1tsp vanilla essence
  • Mint leaves

Method

  1. Wash, hull and slice the strawberries. Reserve a few for garnish. Toss the rest with 1 tablespoon of powdered sugar and let them sit for 5-10 minutes to release their juices.
  2. In a bowl, whip the fresh cream or Greek yogurt with 1 tablespoon of powdered sugar and vanilla essence until smooth. Chill in the fridge.
  3. Use clear glasses or dessert cups. Start with a layer of crushed granola or biscuits at the bottom.
  4. Spoon a layer of the sugared strawberries on top of the granola, so the juices can seep into the layers.
  5. Top with a generous layer of whipped cream or yogurt.
  6. Repeat the granola, strawberry and cream layers until the glass is full, top with a cream layer.
  7. With fresh strawberry slices and mint leaves. Chill for 30 minutes before serving. Serve cold.

Tips To Make The Perfect And Layered Strawberry Parfaits

1. Fresh Ripe Strawberries

Your strawberries are everything, so use fresh, ripe, bright red strawberries for the best flavor and texture. If strawberries are out of season you can use frozen but make sure they are thawed and drained to avoid excess water diluting the layers.

2. Balance Sweetness With Tartness

Strawberries can be sweet or tart, so taste your fruit before you assemble the parfaits and adjust the sugar in your cream or yogurt accordingly. If the berries are too tart, macerate them with a little powdered sugar and lemon zest to bring out their natural flavors.
