  1. First, you have to preheat the oven to 180°C, and grease and flour three round cake pans.
  2. In a medium-sized bowl, whisk eggs together with granulated sugar until a pale and thick consistency develops.
  3. Next, you are going to sift flour and cornstarch over the egg mixture, and fold gently until no streaks of flour are visible.
  4. In another bowl, you have to beat egg whites and sugar at high speed till the mixture is stiff and does not slide off the bowl, and then pour this mixture into the eggs, and fold well. You must take care to stir everything until you don't see any streaks from the egg white.
  5. After that, you can divide the batter in the prepared pans, and smooth the tops of the pans by tapping them gently onto the kitchen countertop.
  6. Then, you have to bake them for 20 to 25 minutes.
  7. Next, cool the cakes in their pans for another 5 minutes.
  8. Then, you need to transfer them to a wire rack to cool off completely.
  9. Now, in a medium bowl, you can whip heavy cream until stiff peaks form, and whisk together sugar, egg yolks, and vanilla extract in another bowl.
  10. Then, you have to gently fold the yolk mixture into the whipped cream until they are combined.
  11. To assemble the cake, you have to place one of the cooled genoise cakes on a cake stand, and brush the top of this cake with a layer of the creamy mixture.
  12. Then, you can spread a layer of sliced strawberries over the top of the cream.
  13. Now you can repeat layers two more times, so the cake finishes with a layer of diplomat cream on top.
  14. Then, you can dust the top of the cake with powdered sugar and dot the border of the cake with sliced strawberries.
  15. Finally you can serve the cake on a fancy serving plate, and enjoy. You can store any leftovers in the refrigerator for up to 24 hours before serving.

If you want, you can add a teaspoon of liqueur, such as Grand Marnier or Cognac to flavor the cream. This tip, however, is only if you are baking for grown-ups and not for a party of children. For a beautiful presentation, you can arrange sliced strawberries in a spiral pattern over the top of the cake, or pipe a border of diplomat cream around the edge of the cake.

This is a perfect dish to make if you have a party of elite guests or if you are hosting a formal event for your colleagues at work. Alternatively, it also goes well for themed parties or lunches with guests who are known to enjoy the finest things in life.

To make a perfect serving dish for this cake, thrift a small vintage mirror with an antique border and paint sunflower and water lilies on the mirror, before coating it in resin. You can use this tray as the centerpiece, decorate it with a mix of fresh and dried flowers and leaves, and place the cake right in the middle.
