We all love the classic confetti cake, but how about giving it a crunchy twist? Surprise your guests and impress them with crunchy textures and fabulous flavors. This version of our confetti cake hides an unexpected crispy layer right in the middle. And this will make your cake a memorable treat for your friends and family. Perhaps, this could be the very USP of your take on confetti cakes.

Ingredients:

  • 250 gm all-purpose flour
  • 15 gm baking powder
  • A pinch of salt 
  • 125 gm unsalted butter, softened
  • 250 gm granulated sugar
  • 2 large eggs
  • 5 ml almond extract 
  • 240 ml whole milk
  • 50 gm rainbow sprinkles
  • 80 gm crushed digestive biscuits 
  • 30 gm brown sugar
  • 50 gm melted butter

Instructions:

  1. Preheat your oven to 180°C. Grease and line two 9-inch cake pans—you don’t want your crunchy surprise to stick.
  2. In a bowl, combine the dry ingredients: flour, baking powder, and salt. Keep it aside for later.
  3. Cream the softened butter and granulated sugar until they’re light and fluffy, almost like whipped clouds. Add in the eggs, one at a time, followed by the almond extract. You’re now good to go with your wet ingredients.
  4. Gradually fold in the dry ingredients, alternating with the milk. Stir just enough—no overworking the batter. Gently fold in the sprinkles because we’re all here for that colorful pop.
  5. Now, for the secret surprise: Mix the crushed digestive biscuits with brown sugar and melted butter in a separate bowl until it resembles a coarse crumble.
  6. Pour half of the cake batter into your prepared pans. Sprinkle the biscuit crumble evenly over the top of the batter in each pan, then cover it with the remaining batter. This crunchy layer in the middle is what makes this cake stand out.
  7. Bake at 180°C for 25-30 minutes until golden and a toothpick comes out clean. Let the cakes cool completely before frosting.
  8. Frost with almond buttercream or your favorite frosting. And as always—don’t forget the final shower of rainbow sprinkles. Let them rain colors!
