Ingredients:

  • 170 gm unsalted butter
  • 113 gm semi-sweet chocolate bar, coarsely chopped and divided
  • 400 gm granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 82 gm unsweetened natural or dutch-process cocoa powder
  • 125 gm all-purpose flour (spooned & leveled)
  • 1 teaspoon salt
  • Optional: 225 gm semi-sweet chocolate chips

  • Preheat the oven to 350°F or 177°C.
  • Grease a pan with butter and add parchment paper, leaving an overhang on the sides so you can easily lift out the baked brownies later. Set aside.
  • In a microwave safe bowl, add the butter and chocolate. Heat for 30 seconds, then stop the heat and mix it up. Then put it back in for 30 seconds. Continue in this way, in 30 second bursts and stirring in between, till it's fully melted and mixed in.

    Create a double boiler. Place a pan or pot filled with water on the stove on medium heat. Then add the butter and chocolate to a smaller pot and place the small pot in the water. Keep stirring till it has thoroughly mixed in.
  • Then add the sugar to the mix and beat with a handheld mixer or a stand mixer with a paddle attachment until the granulated sugar is fully dissolved. Next, add the eggs, one at a time. First add one, beat it in thoroughly, then add the next one and so on. Now and the vanilla and mix.
  • In a bowl, add the cocoa powder, flour and salt and mix well. Slowly transfer this mixture into the egg mixture, one or two spoons at a time. Mix that much in, then add a little bit more of the dry ingredients mixture and so on.
  • Now and the chopped chocolate to the mixture and mix it all in until fully incorporated.
  • Then add the chocolate chips and fold them in. The batter will be thick.
  • Pour the batter into the prepared pan and bake for half an hour. The exact time will depend on the machine you have. You’ll know it's done when a toothpick inserted in the middle comes out clean.
  • Then remove from the oven using the parchment paper overhang and place on a wire rack to cool completely.
  • Cut into squares, add any toppings if desired, and serve warm with milk, coffee or as is.

Notes, tips and tricks:

  • Leftover brownies can be stored in an airtight container at room temperature for a week. The brownies can also be frozen for up to three months. Thaw overnight in the fridge and bring to room temperature before serving.
  • Use dark chocolate for a stronger flavor. But you can also use a milk chocolate if you prefer a lighter and sweeter taste. Adjust the amount of sugar you add accordingly.
  • Use unsalted butter for best results. If you don't have that, you can use salted butter too, but then skip the pinch of salt. However, it's best if you use unsalted butter and then add the salt pinch since the salt really brings out the chocolate and other flavors.
  • Make sure the eggs are at room temperature. They mix best at this temperature.
  • You can also add other items to the batter along with the chocolate chips, like chopped nuts, sprinkles or anything else that you might want to bake into your brownies.
  • Once the batter has set into the pan, before baking, you can add sprinkles, decorations or other additions that you want to see on the top.
  • Baked brownies can be topped with a chocolate or caramel sauce, a fruit compote or add toasted marshmallows on top.
