  • 1 cup granulated sugar
  • 2 tablespoons of lemon zest
  • 6 egg yolks
  • 1/2 cup of lemon juice
  • 1/2 cup unsalted butter, cold

Method:

  • By placing a heatproof bowl over a pot of simmering water, you can create a double boiler. Make sure the bowl does not come into contact with the water.
  • Whisk together the granulated sugar and egg yolks in a heatproof bowl until fully mixed.
  • Incorporate the lemon zest and juice into the sugar and egg yolk mixture. Continue to whisk until the mixture is smooth.
  • Place the bowl over a pan of hot water and heat, stirring regularly, until the mixture thickens. This should take approximately 10–15 minutes. The mixture should be thick enough to coat the back of a spoon.
  • Cut the cold butter into small pieces and stir it into the lemon curd mixture gradually. Continue to stir until the butter has completely melted and the curd is smooth.
  • If you want a smoother lemon curd, strain the mixture through a fine-mesh sieve into a clean bowl to eliminate any particles of zest or cooked egg.
  • Allow the lemon curd to cool to room temperature before transferring it to an airtight jar. Refrigerate the curd for at least 2 hours, or until totally cooled and firm.
