Mint Sandwich Cookies

The variety of flavors in this cookie sandwich will take you by surprise. One bite, and you’re hooked. The crunchy, buttery crackers create a satisfying texture. The mint filling? Refreshing and creamy. Share with friends and family– or maybe not!

Ingredients:

  • 450 gm vanilla frosting
  • 2- 3 gm peppermint extract
  • 3 to 5 drops green food coloring, optional
  • 72 butter-flavored crackers
  • 120 grams Cadbury dark cocoa powder
  • 200 grams powdered sugar
  • 60 grams coconut oil or vegetable shortening
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

We will first make the dark chocolate candy coating:

a. Melt the oil in a bowl.

b. In another bowl, sift together Cadbury dark cocoa powder, powdered sugar, and a pinch of salt.

c. Gradually add the dry mixture to the melted coconut oil while stirring continuously. This helps create a smooth coating.

d. Add and mix with a spoon 1 teaspoon of vanilla extract for added flavor.

e. If the mixture is too thick, add a little more melted coconut oil. If it’s too thin, mix in a bit more cocoa powder or powdered sugar.

  1. Set it aside.
  2. Now we will proceed to make the sandwich.
  3. Prepare the Filling by mixing together the vanilla frosting, peppermint extract, and green food coloring in a large bowl. Ensure the mixture is well combined.
  4. Take half of the butter-flavored crackers and spread a generous amount of the mint filling mixture on each one. Top each filled cracker with another cracker to form sandwiches.
  5. Melt the chocolate coating if it has hardened. Stir occasionally to ensure even melting.
  6. Dip each assembled cookie sandwich into the chocolate melt. Make sure you are coating the sandwiches completely.
  7. Remember to drip off any excess chocolate before placing the cookies on waxed paper.
  8. Let the dipped cookies stand on the waxed paper until the chocolate coating is set and firm.
  9. Once the chocolate coating has hardened, store the mint sandwich cookies in an airtight container.

Simple Mint Brownies Recipe

Ingredients:

For the Brownies:

  • 120 gm unsalted butter
  • 200 gm granulated sugar
  • 2 large eggs
  • 5 ml vanilla extract
  • 120 gm all-purpose flour
  • 40 gm unsweetened cocoa powder
  • 2 pinches of salt
  • 2 pinches of baking powder

For the Mint Frosting:

  • 115 gm unsalted butter, softened
  • 230 gm powdered sugar
  • 30-60 ml milk (or dairy-free alternative)
  • 5 ml peppermint extract

Instructions:

  1. Preheat your oven to 175°C.
  2. Grease and line an 8-inch (20 cm) square baking pan with parchment paper.
  3. Melt the unsalted butter in a saucepan. Remove from heat and stir in the granulated sugar.
  4. Wet Ingredients: Add the eggs and vanilla extract, mixing until smooth.
  5. Dry Ingredients: In another bowl, mix together the flour, cocoa powder, salt, and baking powder.
  6. Combine the dry ingredients with the wet mixture until just mixed.
  7. Pour the brownie batter into the prepared pan and spread evenly.
  8. Bake at 175°C for about 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the brownies cool completely in the pan.
  10. In a bowl, beat the softened butter until creamy.
  11. Gradually mix in the powdered sugar and enough milk to reach your desired consistency.
  12. Add the peppermint extract and mix until combined.
  13. Spread the mint frosting evenly over the cooled brownies.

Chill the brownies in the fridge for about 30 minutes. Cut into squares and enjoy!
