Ingredients

  • 1 sheet of puff pastry (230g)
  • 2 bananas, sliced
  • 2 tbsp unsalted butter
  • 3 tbsp brown sugar
  • 1 tsp cinnamon powder
  • 1 tsp vanilla extract
  • 1 tbsp milk (optional, for brushing)
  • Pinch of salt

Method

  1. Preheat the oven to 180°C (350°F). Roll out the puff pastry on a lightly floured surface.
  2. Use a round cookie cutter or a glass to cut the pastry into small circles, big enough to line the wells of a mini muffin tin.
  3. Place the pastry circles into the muffin tin, pressing gently to fit them into the cups.
  4. In a small pan, melt the butter over medium heat.
  5. Add the sliced bananas, cinnamon powder and brown sugar. Stir gently to coat the bananas evenly with the sugar and butter.
  6. Cook for 3-5 minutes until the bananas are soft and the sugar is caramelised, turning golden.
  7. Stir in the vanilla extract and a pinch of salt. Remove from heat once the bananas are caramelised.
  8. Spoon a small amount of the caramelised banana mixture into each puff pastry cup. Be generous as the bananas will shrink a bit while baking.
  9. Brush the edges of the pastry with a little milk for a golden finish.
  10. Place the muffin tin in the oven and bake for 15-20 minutes or until the puff pastry is golden and puffed.
  11. Once baked, let the pastry cups cool for a few minutes.
  12. Serve warm or at room temperature.
