Dark Chocolate Avocado Mousse
Ingredients:
- 2 ripe avocados
- 180 g melted Cadbury Bournville Rich Cocoa 70% Dark Chocolate
- 30 g Cadbury Cocoa Powder
- 80 ml almond milk
- 80 ml maple syrup
- ½ tsp vanilla extract
- ¼ tsp cinnamon powder
- A pinch of salt
Instructions:
- In a food processor, blitz the avocados, melted chocolate, cocoa powder, almond milk, maple syrup, vanilla extract, cinnamon powder, and a pinch of salt until smooth and slightly airy.
- Transfer into serving cups and let the mousse completely chill.
- You can garnish shaved chocolate and chopped nuts.
- If you want an extra protein kick, you can also add a scoop of your favorite protein powder (ideally vanilla or chocolate flavored) to the mousse.
Golden Milk Ice Cream
Ingredients:
- 480 g cold, heavy cream
- 480 g condensed milk
- 1 tbsp turmeric powder (you can also use fresh grated turmeric)
- ¼ tbsp vanilla extract
Instructions:
- Ensure that the heavy cream is chilled before you begin this process.
- Add it to a large mixing bowl, followed by the turmeric powder and vanilla extract. Using a handheld blender, whisk till you get stiff peaks.
- Using a spatula, fold the condensed milk until thoroughly incorporated.
- Transfer the ice cream mixture into a container and either cover it with a lid or cling film.
- Freeze the ice cream overnight.
Sweet Potato Brownies
Ingredients:
- 1 cup (approximately 240 g) sweet potato puree
- 160 g maple syrup
- 125 g peanut butter
- 1 tsp vanilla extract
- 1 ½ tbsp melted butter
- 69 g Cadbury Cocoa Powder
- ¼ tsp salt
- 1 tsp baking powder
- 80 g plain flour (you can also use oat flour)
- 60 g chopped walnuts
- 30 g chopped Cadbury Bournville Rich Cocoa 70% Dark Chocolate
Instructions:
- Pressure cook one large sweet potato or two small ones in a pressure cooker for about three to four whistles. Once cool, peel and blend them into a smooth paste in a food processor.
- Preheat the oven to 180° C and line a baking pan with parchment paper.
- Add the sweet potato puree, maple syrup, peanut butter, vanilla extract, and melted butter into a mixing bowl. Combine all the ingredients well.
- Then add the cocoa powder, baking powder, salt, and flour until you have a thick brownie batter. You can also add walnuts at this stage.
- Transfer into the lined baking tin and pop this into the oven for about half an hour.
- Insert a toothpick to check for doneness.
- Remove from the oven and let the brownies cool for an hour before slicing them.
