Ghostly Pumpkin Pudding Cups

Startle your guests with these fun ghostly pumpkin pudding cups.

Ingredients

For the pudding:

  • 1 packet of gelatin
  • 473 ml whole milk
  • 200 gm sugar
  • 6 large egg yolks
  • ¼ tsp ground cinnamon
  • ¼ tsp salt
  • 425 gm pumpkin puree

For the topping:

  • 2 large egg whites
  • 66 gm sugar
  • ½ tsp cream of tartar
  • A pinch of salt
  • Candies resembling eyes

Instructions

To make the pudding:

  1. In a bowl, mix 1 tbsp of cold water with gelatin. Set it aside to let the gelatin soften and bloom.
  2. Boil water in a saucepan. The saucepan should be wide enough to accommodate another bowl on top of it.
  3. In a bowl, whisk milk, sugar, egg yolks, cinnamon and salt. Place the bowl above the boiling water in the saucepan and cook. Make sure to constantly stir the mixture until it thickens and almost comes to a boil. This should take 10-12 minutes.
  4. At this point, remove the bowl from the heat and pour the prepared gelatin. Whisk thoroughly until the gelatin is completely dissolved. Finally, whisk in the pumpkin puree until it is well combined and smooth.
  5. Equally divide the mixture into your serving cups. Refrigerate for about four to eight hours.

To make the topping:

  1. In a bowl, whisk egg whites, sugar, cream of tartar and salt and place it above a saucepan containing boiling water. Whisk the mixture for about 1-2 minutes until the sugar is dissolved.
  2. Remove the bowl from the heat and using an electric mixer, beat the mixture at medium-high speed for 5 minutes until it forms stiff peaks.

Spoon or pipe the topping on top of the pudding cups. Decorate with candied eyes and refrigerate before serving. You can also try these other Halloween-themed decoration ideas.

Marshmallow Web Candied Apples

No Halloween celebration is complete without candied apples. Create this spooky marshmallow web version.

Ingredients

  • 8 small red apples
  • 600 gm sugar
  • 125 ml light corn syrup
  • Soft gel red food coloring
  • Soft gel blue food coloring
  • 1 tsp cinnamon powder
  • 250 gm mini marshmallows

Instructions

  1. In a saucepan, combine sugar, corn syrup and 236 ml water. Bring the mixture to a boil. Using a candy thermometer, cook the mixture until it reaches a temperature of 150°C. Turn off the heat and let the bubbles subside. This should take about 2 minutes. Add 1 drop of the soft gel red food coloring and cinnamon powder and stir well.
  2. Line a large baking tray with parchment paper. Skewer the apples at the stem end.
  3. Dip four apples into the sugar mixture until they are fully coated.
  4. Add a few drops of the soft gel blue food coloring to the remaining syrup until it turns into a deep shade of purple. Dip the remaining apples into the syrup. Let the apples stand on the parchment paper until they harden. This should take about five minutes.
  5. To create the marshmallow web, microwave the mini marshmallows for 30 seconds. Stir until the marshmallows lose their shape. Let it cool slightly.
  6. Then pick up the marshmallow between your thumb and forefinger and stretch it to form strands; quickly wrap them around the apples to create a web-like look.
  7. Your candied apples are ready to be bitten into.
