Check out the recipe here:

Ingredients:

For the cake:

  • 251 gm flour
  • 202 gm sugar
  • 3 tsp baking powder
  • A pinch of salt
  • 251 ml milk
  • 122 ml vegetable oil
  • 3 eggs
  • 2 tsp vanilla extract

For the strawberry jam:

  • 201 gm strawberries
  • 102 gm sugar
  • 3 tbsp lemon juice
  • 204 gm butter
  • 401 gm sugar
  • 3 tsp vanilla extract
  • 124 ml milk

For garnish:

  • Strawberries
  • Whipped cream
  • Sugar

Method:

  1. First, you have to preheat your oven to 180°C, grease round cake pans, and line their bottoms with parchment paper.
  2. In a medium-sized bowl, you are going to whisk together all-purpose flour, granulated sugar, baking powder, and salt.
  3. In a big mixing bowl, you need to whisk together whole milk, vegetable oil, eggs, and pure vanilla extract. You need to whisk the wet ingredients until they are smooth and well combined.
  4. Then, gradually add the dry ingredients to the wet ingredients, and whisk until the mix is just about combined, but not overmixed. Overworking the batter would make the cake dense.
  5. Then, you can distribute the batter into the prepared pans.
  6. You have to bake the cakes for 25 to 30 minutes.
  7. You need to allow them to cool completely on a wire rack.
  8. To start preparing the strawberry jam filling, you have to combine fresh sliced strawberries, granulated sugar, and lemon juice in a medium-sized bowl. You need to break the strawberries down with a fork or a ladle until they are smooth in texture.
  9. You can boil the strawberry mixture in a medium saucepan over medium heat, stirring it constantly. Bring it to a simmer and cook the mixture for 10 to 15 minutes or until the jam is thick and syrupy.
  10. Once you remove the jam from the heat, you need to let the strawberry jam filling cool to room temperature. Run the jam through a sieve to remove the skins.
  11. To assemble the cake, you have to first place one of the cooled cakes on a stand and spread a thick layer of strawberry jam filling over the top of the cake.
  12. Then, you will top the first cake with the second one, and frost the top and sides of the cake with creamy buttercream frosting.
  13. Before serving, garnish with fresh strawberries, whipped cream, or powdered sugar.

Using fresh strawberries in baking will also reduce your usage of refined sugars and artificial flavorings.

Making your own jam filling from scratch is such a fun and rewarding experience. You can control the amount of sugar that goes into the jam, and you are able to use fresh, seasonal ingredients. Homemade jam filling is also a wonderful gift for friends and family and can be used as a topping for yogurt, oatmeal, or ice cream. However, since the jams are preservative free, they need to be consumed within a month of the jar being opened.
