1. Coconut and Lime Chia Pudding
This refreshing and creamy chia pudding combines the tropical flavors of coconut and lime, providing a cooling and satisfying treat for hot summer days. Can’t have a Chocolate Pudding? Fear not, these sugar free desserts with tropical taste will blow your mind.
Ingredients:
- 400 ml coconut milk (full-fat or light)
- 60 gm chia seeds
- 30 ml lime juice (approx. 2 limes)
- 5 gm lime zest (optional)
- 5 gm stevia (or 5 drops of liquid stevia)
- 5 ml vanilla extract
- 50 gm unsweetened shredded coconut (optional)
- Fresh berries or mint for garnish
Procedure:
- Combine coconut milk and chia seeds: In a large bowl, mix the coconut milk, chia seeds, and stevia. Stir well to avoid clumps.
- Add lime juice and vanilla: Stir in the lime juice, lime zest, and vanilla extract. The lime will add a zesty kick while the vanilla balances the tartness.
- Chill the pudding: Cover the bowl and place it in the fridge for at least four hours or overnight to allow the chia seeds to absorb the liquid and thicken the mixture.
- Stir and check consistency: After chilling, give it a good stir. If it’s too thick, add a splash of coconut milk to reach your desired consistency.
- Serve: Top the pudding with shredded coconut, fresh berries, or mint leaves for added texture and flavor.
2. Sugar-Free Watermelon Granita
Watermelon is synonymous with summer, and this sugar-free granita is an excellent way to enjoy its naturally sweet flavors. Granita is a simple frozen dessert with a texture between a slush and sorbet, perfect for a light, cooling treat. You can serve this in place of Oreo Shake, if you’re looking for healthy options.
Ingredients:
- 1 kg watermelon (cubed and de-seeded)
- 30 ml fresh lemon juice
- 10 ml lime juice
- 10 ml monk fruit sweetener (optional for extra sweetness)
- Fresh mint leaves for garnish
Procedure:
- Place the cubed watermelon in a blender or food processor and blend until smooth. Strain the mixture through a fine mesh sieve into a large bowl to remove any pulp or seeds.
- Stir in the lemon juice, lime juice, and monk fruit sweetener (if using). Taste the mixture to adjust sweetness as needed. Watermelon is naturally sweet, so you might not need any added sweetener.
- Pour the mixture into a shallow, wide dish, and place it in the freezer.
- After 30 minutes, scrape the edges of the mixture with a fork to create ice crystals. Continue scraping every 30 minutes for 2-3 hours until the entire mixture becomes light and flaky.
- Spoon the granita into bowls or glasses and garnish with fresh mint leaves for an added touch of freshness.

- 50 gm raspberries
- 15 gm sliced almonds, toasted if desired
