1. Mango Coconut Chia Pudding Parfaits
This one's for the lazy yet ambitious dessert maker. Minimal effort, maximum flavor. It has the same texture as a Chocolate Pudding, only with a summery twist.
Ingredients (Serves 4):
- 400 ml coconut milk
- 100 ml water
- 100 gm chia seeds
- 2 ripe mangoes
- 15 ml honey or maple syrup
- 50 gm shredded coconut (toasted for extra flair)
- Fresh mint leaves for garnish
Procedure:
- Mix the Chia: In a medium bowl, whisk together the coconut milk, water, and chia seeds. Add the honey (or maple syrup) for a touch of sweetness. Whisk again like you're stirring up summer magic.

Procedure:
- Preheat the Grill: If you don’t have a grill, a grill pan will do just fine. Set it to medium heat, and let it warm up while you prep the peaches.
